Spinach and mushroom stuffed pork loin

Recipe Ingredients for spinach and mushroom stuffed pork loin

1 medium(94 g) Onions
6 1/10 grams Butter
1 1/2 stalks Celery
6 oz Mushrooms
6 oz Spinach
2 1/2 cup Herb Seasoned Stuffing
1 cup Light
40 oz Pork, Fresh, Loin, Top Loin (Roasts), Boneless

Recipe Directions for spinach and mushroom stuffed pork loin

  1. us 2.5-3 lb pork roast, butterfied and pounded or sliced and rolled out to about 1/2 inch thick.

  2. In duch oven, saute celery and onion in butter or spray such as Pam and cook until soft.

  3. Add mushrooms and cook about 3 minutes more.

  4. Add spinach and cook just a few minutes, until it cooks down.

  5. Combine herbs with bread crumbs and add to pot. Toss to coat and combine. Then slowly add chicken stock until bread is moistened. If you wish you can add 1 cup of shredded cheese, add or omit based on how many calories you wish consume, note not part of calorie count, you will need to add the count based on type of cheese. Any soft cheese would do, mozzerella, gouda, parmesan or reduced fat. Spread stuffing onto pork loin, spreading over meat to about 1/2 inch from all sides and roll up and tie. Spray outside with pam or butter spray. cover loosely with foil and bake on rack over cookie sheet at 400 for about 45-65 minutes, remove foil at about 45 minutes or so to allow meat to brown or until meat themometer reads 140-145 degrees.

  6. Let rest a few minutes to make slicing easier.
