Yummy variation on a restuarant classic. Good with salsa.
| 8 | flour tortilla |
| 10 | oz. frozen spinach |
| 1 | cup onion, chopped |
| 1 1/2 | cup low-fat cottage cheese |
| 1 | chicken breast |
- Saute onion and chicken in a non-stick skillet with pam until done.
- Chop chicken very small. Mix with drained spinach.
- Over medium heat in a large skillet, put tortilla, 1/4 spinach mix , 1/4 of cheese, and top with another tortilla. Cook on both sides 1 minute.
- Cut into 8 wedges, four wedges per serving.
