Spinach, ricotta and feta filo pastry pie. serves 4. Vegetarian if you make sure to use vegetarian cheeses. Nice served with a side salad.

Recipe Ingredients for Spinach, Ricotta, and Feta filo pie

1 1/2 tbsp sunflower oil
1 medium onion
2 cloves garlic
250 g frozen spinach
1 egg
250 g Italian Ricotta
100 g Nume Greek Salad Cheese
1/2 tsp nutmeg
50 g pine nuts
1/2 tsp salt
1/2 tsp pepper
135 g Filo Pastry Sheets

Recipe Directions for Spinach, Ricotta, and Feta filo pie

  1. Toast the pine nuts in a 200C oven for five minutes. Allow to cool.

  2. Heat a tablespoon of oil in a large pan and fry the onion and garlic for 10 minutes until soft but not coloured. Add the spinach and cook for 5 minutes, stirring. Tip into a sieve and press to remove as much excess liquid as possible. Cool.

  3. Beat the egg with the ricotta and nutmeg and season. Stir in the feta and pine nuts with the spinach and onion.

  4. Heat the oven to 200C/fan 180C/gas 6.

  5. Brush a 20cm loose-based cake tin with a little oil. Line with the filo sheets, leaving excess pastry overhanging and brushing each sheet with oil. Spoon the cheese and spinach mixture into the tin. Bring the pastry up and over the top of the pie. Brush generously with oil.

  6. Bake for 25-30 minutes until golden brown and crisp. Serve warm or cold.
