Recipe Ingredients for spinach and ricotta triangles

500 g puff pastry, frozen
650 g ricotta cheese
126 g spinach, frozen
50 g spring onion
1 egg
1 tsp pepper
1/2 tsp salt

Recipe Directions for spinach and ricotta triangles

  1. divide 3 pastry sheets into 9 squares each (total 27)

  2. crumble cheese into bowl

  3. add well drained spinach

  4. add egg and chopped onion

  5. season

  6. beat together then divide between pastry squares

  7. fold corner to corner, pressing to seal edges

  8. bake in hot oven until crisp and golden
