Spinach Salad with Eggs, Orange & Pecans Recipe

A nice salad for any day of the week

Ingredients
3 cups spinach
1 small orange
2 tbsp. chopped red onion
2 hard-boiled eggs
1 tbsp. roasted pecans
2 tsp. olive oil
2 tsp. orange juice
1/2 tsp. lemon juice
Directions
  1. In a bowl combine the spinach, orange (peeled, slced & seeded) red onion, hard boiled egg shelled and sliced.

  2. Chop the pecan and roast them in a saute pan.

  3. Dressing combine the olive oil, orange juice and lemon juice in a small bowl mix and drisle over salad.

  4. Serve with triscuits if desired.
