A nice salad for any day of the week
| 3 | cups spinach |
| 1 | small orange |
| 2 | tbsp. chopped red onion |
| 2 | hard-boiled eggs |
| 1 | tbsp. roasted pecans |
| 2 | tsp. olive oil |
| 2 | tsp. orange juice |
| 1/2 | tsp. lemon juice |
- In a bowl combine the spinach, orange (peeled, slced & seeded) red onion, hard boiled egg shelled and sliced.
- Chop the pecan and roast them in a saute pan.
- Dressing combine the olive oil, orange juice and lemon juice in a small bowl mix and drisle over salad.
- Serve with triscuits if desired.
