This is a great standby recipe that can be prepared in 10 minutes, with about 30 minute cooking time. It's delicious and easy to "fool" the kids (or husband) into eating spinach! Goes wonderfully with merely asparagus as a side. To keep the calories low avoid serving with starches. MODIFICATIONS: Feel free to substitute other soups instead of cream of chicken. I like Campbell's Cream of Mushroom and sometimes I even mix the two! Also for non-veggie eaters like my dad, I make it with stuffing inside or even wild-rice. It adds calories obviously! You can also leave off the cheese for the super calorie-conscious though I think it tastes infinitely better with it.
| 1 | lb Chicken Breast, thin sliced, lean |
| 1 | lb Baby Spinach |
| 120 | g Healthy Choice Virginia Ham |
| 2 | oz Provolone |
| 2 | cups 98% Fat Free Campbell's Cream of Chicken soup |
- Roll one thin slice of chicken around a handfull (as much as you can cram in there!) of baby spinach.
- Wrap one or two thin slices of Virginia honey ham around that (use opposite seams so the roll won't fall apart!)
- Wrap one (or better yet, a half!) thin slice of provolone around the ham and chicken (opposite seams again!)
- Place in casserole dish and pour in cold or lukewarm soup cut with water to a consistency you desire (I suggest about 0.25-0.5 can water for a full can of soup)
- Cook at 400 deg C for about 30 minutes until chicken is thoroughly cooked. Occasionally spoon soup over rolls to keep moist and stir soup. Ham will brown on edges. Cheese will melt.
- Serve with steamed broccoli or asparagus to keep the nutrition content up and the calorie content down.
- Please note what is missing from the calorie tally is the soup as it won't register for some reason. The soup I indicate you should use is 70 calories for a 1/2 cup which is about what should be poured on each person's dish. So the total for the recipe is just shy of 400 calories.
