squash
Okay so I bought (already cut up b/c I'm lazy) squash - acorn squash, butternut squash, and some squash that began with a "D".
Now, what can I do with it?
Toss the cubes in some olive oil and spices (cinnamon, chili powder, allspice, paprika, salt, pepper... all good), maple syrup or chopped garlic, lay on a baking sheet and baked for about 30-40 mins at 400F. The time will depend on how big the squash pieces are. Check after 25 mins to see if they're soft. I like to flip my squash pieces halfway through so they cook evenly.
I always bake mine. and I cut mine up in 1/4's becauseI will get the entire squash (approx 2.5"x5.5"per piece) and I will bake all 4 pieces at the same time just wrapped separately. but if it's pre-cut it all will taste the same :-) yummy...
take some foil (that will wrap the entire piece up in)
set skin side of squash down on foil (if left on)
sprinkle with small amount of water 1 TBS (also depends on size of squash)
sprinkle with brown sugar (don't need very much) 1 tsp (also depends on size)
seal in foil place on rack in oven bake for 30 min at 400 (time also will depend on the size) your squash will be soft when done.
my son will add some smart ballance butter to his but I like mine with out.
