Squash Recipes
Hi everyone I am in need of recipes for yellow and zucchini squash recipes my garden is overflowing and my husband and I love squash but we are both getting tired of the same old way i cook them. Not looking for anything too fancy just something simple and low cal. Any help would be greatly appreciated

I fry it up in a pan sprayed with no-fat olive oil cooking spray. I cut it up in small pieces and season with Onion powder, garlic powder, chili powder and whatever other spices you like. Then mix with whole wheat noodles or brown rice.
I also cook it like that and add it to spaghetti sauce.
Also cook like that and mix with fried cabbage and whole wheat noodles.
I put it in a microwave steamer bag and steam it and eat as a side dish.
I make squash fries. Spray a cookie sheet with no-fat olive oil cooking spray. Cut up the squash in fry shapes. Put in a large bowl and sprinkle with your favorite seasonings. Mix it up really well and let it sit for a while. Then put on cookie sheet in single layers and bake at 350 until crispy and done. Very good
Stir Fry Squash
Olive oil, yellow squash, onion, red bell pepper, garlic and pepper.
Here's a good way to use up the ones that got too big. Cut them lengthwise and scoop out the seeds, peel (because the peel gets tough) and cut in 1 1/2" - 2" dice. Plop that into a pot with some peeled, seeded, diced tomatoes (use canned if you don't have any fresh). Add some chopped onion & celery, salt & pepper and garlic. Simmer, covered until the squash is soft. I like to add a little fresh basil at the end.
Actually you can do this with the little ones. You don't have to peel and seed. Just cut them in pieces.
I toss them with evoo and seasoning salt, then sear (sp?) in a pan so they get a nice brown crust on them, and keep flipping them until I get all the sides.
I also prepare them the same way but instead of putting them in a pan, I put them on the bbq, just watch them, they cook up fast!
One way to use a lot of them at once is to put them in a soup - should be easy to find online.
I don't know how you make them, but I just boil yellow squash (cut up) in water, then drain and add a little butter and salt....heaven on earth!
I really wish I had your problem....actually just wish I had a garden period! The produce on the east coast is lacking to say the least!
I just had baked zucchini for dinner tonight:
cut zucchini lengthwise
hollow it out and stir fry pulp in olive oil w/ mushrooms, boca meat, red peppers, or anything else that sounds good.
put 2 halves of zucchini in a large sauce pan, cover with water, and boil until soft
put the hollowed out zucchini on a cookie sheet and fill in with the mixture
cover with pieces of part skim motzarella cheese
heat until cheese melts
yum :)
HI our garden is over flowing as well what I just finished doing is putting it in freezer for winter, all you do is wash well cut up get a pot with boiling water make sure its boiling before you put squash in make a batch of ice water to put squash in after you boil it 3 mins then drain put in ice water drain good and put in freezer bags
you can make casseroles stir frys put them in sauces this winter and enjoy
I enjoy raw, sliced or diced zucchini or yellow squash in salads...better than cucumbers!
Alternate cubes with mushrooms, cherry tomatoes, onion quaters, etc...for a tasty shishkabob!
Sliced lengthwise, about 1/2" or so, spray with olive oil and sprinkle with garlic salt, then grill....Yummy!
I have a marvelous baked zucchini casserole recipe, but it's loaded with fat, and when I try to alter it with low fat ingredients, Yuk! So I make it when having company or taking a dish to pass. That way I can take a very small portion, and let everyone else feast.
I saw some cooking show where the chef made squah with maple syrup glazed on top for a little girl who wouldn't eat her veggies and she loved it.
