A St. Patrick's Day Feast

Show off your Irish culinary skills this weekend for St. Patrick's Day! Choose between roast leg of lamb with rosemary or traditional Guinness beef stew. Mash a few root veggies. Set out your prettiest bowl filled with low calorie sauteed Irish cabbage. Slice warm beautifully browned Irish soda bread and enjoy. Even if you are not lucky enough to be Irish, and if calorie goals allow, end the meal in the traditional way - with a slice of delicious apple tart.

Gavan Murphy provides both a recipe and video to show you how to make a great Beef and Guinness Stew. I set the nutrition facts for eight servings instead of the four large half-pound servings indicated in the recipe. If you eat less than the amount I set, use decimal fractions when you log - ie: .5 serving.

Simple Roast Leg of Lamb is a snap to make. The nutrition facts were set for six servings.

Colorful Irish Carrot Parsnip Mash make a lovely nutritious change from plain old mashed potatoes. The nutrition facts may just surprise you.

The Barefoot Contessa's Sauteed Cabbage recipe is superb. I've tweaked the salt in the nutrition facts as many of us here eat reduced sodium meals. If you use the level of salt in her recipe, add salt separately when you log.

Try this healthier part whole-wheat Irish Soda Bread! Log your bread with these nutrition facts.

Enjoy a slice of Apple Tart either all by itself or with a bit of ice cream or custard. The nutrition facts have been set to eight servings.

corned-beef and carrots w/cabbage in crock-pot..... probably not the healthiest but...its only one time a year!



New England Boil! Corned beef, cabbage, potatoes, carrots and parsnips all in one pot (added at differents times of course!) The best recipe we've been enjoying since my mom made it 50 years ago :-) McCall's Cook Book from 1963.
