Show off your Irish culinary skills this weekend for St. Patrick's Day! Choose between roast leg of lamb with rosemary or traditional Guinness beef stew. Mash a few root veggies. Set out your prettiest bowl filled with low calorie sauteed Irish cabbage. Slice warm beautifully browned Irish soda bread and enjoy. Even if you are not lucky enough to be Irish, and if calorie goals allow, end the meal in the traditional way - with a slice of delicious apple tart.
Gavan Murphy provides both a recipe and video to show you how to make a great Beef and Guinness Stew. I set the nutrition facts for eight servings instead of the four large half-pound servings indicated in the recipe. If you eat less than the amount I set, use decimal fractions when you log - ie: .5 serving.
The Barefoot Contessa's Sauteed Cabbage recipe is superb. I've tweaked the salt in the nutrition facts as many of us here eat reduced sodium meals. If you use the level of salt in her recipe, add salt separately when you log.
