Marinated beef contrasts nicely with crisp snow peas in this easily prepared Chinese stir-fry. Fresh asparagus or broccoli florets can be substituted for the snow peas.

Recipe Ingredients for Steak Kow in Oyster Sauce

1/2 lb flank steak
1 T low sodium soy sauce
1/4 t sugar
1 T cornstarch
4 T oyster sauce
1/2 t sugar
2 T vodka
2 t canola oil
3/4 lb asparagus
1 t ginger, minced
1 t garlic, minced
5 scallions, cut into 1/5" lengths

Recipe Directions for Steak Kow in Oyster Sauce

  1. In a bowl, combine the steak, soy sauce, sugar and cornstarch. Let stand for 20 minutes.

  2. Combine the oyster sauce, 1/2 t sugar and the vodka. Set aside.

  3. Heat a nonstick skillet or wok. Add 1 t of the oil and heat it. Add the snow peas. Stir-fry for 1 minute, or until bright green. Remove and set aside.

  4. Add the remaining oil and heat it. Add the ginger and garlic. Cook, stirring, until fragrant, about 20 seconds. Add the steak. Stir-fry for about 3 minutes, or until the steak is done. Stir in the oyster sauce mixture. Cook and stir until it begins to bubble. Add the cooked snow peas and the green onions. Cook until heated. through.
