Steamed egg white dessert

I had this in one of the local dessert places after a sushi dinner with friends. Needless to say I was determined to make it myself. After much googling I came across this: http://belle-tongsui.blogspot.com/2007/10/mil k-pudding.html

Being umm me, I made modifications. My version:

Ingredients:

  • 1 cup of fat free milk
  • 120 grams (half a cup) of egg whites. yes yes I actually went out and bought some just for this. heh
  • 10 grams of sugar (more if you have a sweet tooth)
  • 1 tbs unsweetened cocoa

Directions.

Warm milk in the microwave and dissolve the sugar in it. Add the mixture to the egg whites and whisk with fork. Do not over do it! Strain through fine sieve in to a ceramic dish. This step is important otherwise it will be lumpy (my first attempt). Cover with aluminum foil and steam for 20-25 minutes. I used a wok for this with wire thing you put at the bottom. A good tip is to lift the lead after 10 minutes, and then every 5 minutes, to let some of the steam out. When done sprinkle with cocoa. Take it out and let it kool for a few minutes. There is also a version that uses just eggs and less milk. I am going to try it next. Of course you can make a savory version of this with eggs, again my next try. Wink

Ah, I love eating the savory version with the entire egg in it - so delicious!  I've eaten the savory version by adding bits of ground meat, shrimp, and green onion too - you could try to add those in as well.  I've actually never tried the sweet version with cocoa, but that looks like an interesting experiment.  Thanks for sharing!

Yep, I was thinking of adding some dried shrimp, and such. I was curious if I make it the night before and leave in a fridge for the morning, how does it taste cold? Some dishes just don't taste so good once they get cold.

I think the sweet version tastes delicious cold, but the savory tastes better warm.

This looks good - I will definitely be trying this out in the near future!  I definitely agree with white_sakura on the sweet versions being cold.  Does the cocoa really add to the flavour?

It adds cocoa flavor. Tongue out By itself it just somewhat sweet, cocoa adds that chocolaty taste.

I'm really curious about this.  Is the texture like a custard?  It sounds very delicate and nice.
