stuff to do with cans and cans and cans of chickpeas?
anyone have any simple, and preferably cheap ways to use chickpeas in a recipe? they're such good value i buy loads and the day i never thought would arrive has.....im sick of hummus!
Curry!
Saute 5 or 6 asian shallots or other onions, coarsely chopped, in a flavorless cooking oil or peanut oil (just a tablespoon or so).
Add other vegetables if desired, and saute just until not raw. I use a package of frozen spinach (thawed and drained). It makes it a rather unattractive color, but it tastes good.
Add a clove or two of pressed or chopped garlic, about an inch worth of minced ginger root, cook until fragrant, but don't let the garlic burn.
Add some chicken or vegetable stock, but not too much to start.
If desired, add some pre-cooked chicken or other meat.
Add cooked chick peas, probably 2 cans worth, drained and rinsed.
Add 1 can light coconut milk, 1/2 tsp fish sauce (or soy sauce if you don't have any), and yellow curry powder or paste to taste. I use about 3 Tbsp of yellow curry paste, but I like it spicy.
Bring to a simmer, and taste the broth. If it needs some tartness or sweetness, squeeze in a bit of lime juice and add a bit of brown sugar until it tastes right.
Tastes great over rice.
*gasp!* It is possible to become sick of hummus??!! I have 2 cans of chick peas myself and I'm OUT of hummus and waiting not so patiently for my man to make me some more! (I imagine I could get a recipe and do it myself but he just runs in there and whips it up almost effortlessly and it's so good!)
Falafel (Chick pea burgers) - Yum Yum.
- Pat the chickpeas dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, spices, flour and a little salt. Blend until fairly smooth, then shape into four patties with your hands.
- Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. Serve with toasted pittas, tomato salsa and a green salad.

I tweak things in various places to adjust to my lactose intolerance, such as the halloumi salad (I did this with soy cheese, instead). Still. YUMMMM.
Similarly, you can tweak the recipes quite easily (such as if you want to use spray oil or low fat yoghurt if it's not listed as such already, and so on.)

Tips - do pat them dry and when you toss them in the olive oil, make sure they are well coated. I coat them with olive oil first by mixing in a bowl with my hands, then add the seasoning.
Make sure they are well roasted and dry all the way through. If they are underroasted they will be leathery in spots. If roasted long enough they will be crispy crunchy like nuts.
They keep in an airtight container the same as nuts. Make a lot of them!
i only like them in hummus, so i was going to suggest giving them to a soup kitchen
my nana used to make a marinated bean salad with them and i could tolerate that
I've actually pureed the chickpeas and added low-sodium chicken broth, curry, garlic and other various spices and herbs depending on my mood and used it as a topping for roasted/baked chicken, baked potatoes, broccoli - you get the idea - just to try it differently.
You could make vegetarian burgers - instead of using black beans, make chickpea burgers. Or, simply sprinkle them on salad (my fav). Or make a vegetable and bean soup. They can substitute for just about any other bean in a recipe - you just get a slightly different taste.

I just rinse them, add salt and pepper and eat.

feta, lemon and greek seasoning, or
fresh mozzarella, basil and balsamic vinegar

I love chickpeas and hummus, but store-bought hummus is full of calories. I found a recipe for Baba Gha-Hummus years ago in Cooking Light Magazine. It makes it much healthier too!
1 large eggplant
3 TBS tahini
1 1/2 tsp. ground cumin
3/4 tsp salt
1/8 tsp ground red pepper
2 garlic cloves, chopped
1 can chickpeas, rinsed and drained
Preheat the oven to 375. Piercd the eggplan with a fork and place int on a pan. Bake for 30 minutes or until tender. Once it has cooled, peel the skin off. Combine the eggplant, tahini, and all other ingredients into a food processor. Process until smooth. (Yields 2 cups) According to the recipe 1/4 a cup serving has 114 calories.
I love Chickpeas, and I always happen to have tons of cans around.
Here's what I use to make all the time when I was living alone (easy and inexpensive!):
- 1 can chickpeas, drained
- 1 can Solid tuna, drained
- 1/4 chopped onion
- 1 tspn parsley (dry or fresh)
- 1 hardboiled egg, chopped (optional)
- Pinch of Mustard Powder (optional)
- Evoo/Vinegar (preferably red wine vinegar)
- Salt/Pepper.
Mix all together and incorporate last two ingredients to your liking.
Simple, healthy and satisfying. You could also eliminate #7 all together and mix with light mayo instead, for more of a salad feel.
yes make a bean salad!! get 2 other cans of other beans (like red kidney beans, etc)... then put them all into a bowl, mix it up with diced onion, and a touch of olive oil and vinegar... it is SO FILLING and good for you!
