Stuffed Bell Peppers Recipe

Makes 12 servings



Bell peppers stuffed with ground beef, baked in tomato sauce and topped with shredded cheese.

Ingredients
1 1/2 lbs ground beef
6 green bell peppers
1 small brown onion
29 oz. tomato sauce
3 cloves garlic
2 tbsp olive oil
1 cup shredded cheese
2 eggs
1 cup bread crumbs
Directions
  1. Cut the bell peppers in half vertically and remove the cores, stems, and seeds. Boil for 3 to 5 minutes then drain and place in ice cold water to prevent further cooking.

  2. Preheat oven to 400F.

  3. Mince onion, bell pepper tops, and garlic then brown in a pan with 1 tbsp olive oil.

  4. In a large bowl mix ground beef, bread crumbs, and eggs. Add minced vegetables and mold beef mixture into five large meatballs.

  5. Grease a casserole pan with remaining olive oil and place bell peppers in pan standing upright.

  6. Stuff meatballs into bell peppers then drizzle with tomato sauce.

  7. Bake 45 minutes or until meat is cooked all the way through. Cover each stuffed bell pepper with shredded cheese and then return to oven until cheese is browned. Serve with white rice.
