I need some help figuring out a healthy diet. Here's what I had today,

bowl of Cheerios with 1/2 c skim milk -150cal, egg whites with salsa- 26cal, 1/2 pita- 40cal= BREAKFAST-216 calories

two open faced ham sandwiches- 165 calories each (bread 65cal/slice, ham 30cal and lettuce 5 cal) = LUNCH= 330

stir fry veggies -60 cal/cup with chicken breast 200cal and spray for frying-5 cal=DINNER-265

tomatoes slices & cucumber slices- 20 calories
2 slices (tiny) dark rye-26 cal each
with laughing cow light cheese 23 cal and
1/2 c 1% cottage cheese- 100 cal= SNACK-169 calories

All of that adds up to only 980 calories when I am trying to eat 1400, but I'm totally stuffed and can't eat anymore food today. What should I do???

eat an ounce or two of nuts or 2 T of PB.

You asked for help, I gave suggestions of high calorie, low volume foods.  If you don't like them don't eat them.
If you're not hungry, why force food down your throat?
Dont eat if you are not hungry.  I agree with bee_roach and in the future use healthy fats, try not to eat so many low calorie foods, you obviously dont need them.

The body needs a certain number of calories to function properly, that's why.  980 calories isn't enough especially if there's any sort of exercise involved.
Agreed that 980 is not enough calories on an ongoing basis, but one day isn't going to send you into starvation mode.

Make sure you get enough calories tomorrow and after that, and you'll be fine. 

Sounds like you must have a very light appetite.  I'd still be hungry after that very light dinner.  :)
Switch from Cheerios to a higher calorie cereal, like Kashi Go lean crunch, it has more protein also. Or, add to your cereal a half cup or so of granola, that will add around a good 200 calories. Have a whole egg, not the whites or cook them in oil or with butter.

Add cheese or some type or condiment to your sandwitches, Mayo, hummus, etc.

Stir fry your veggies with oil, add startchier veggies like potatoes or corn, or one on the side. Maybe a dinner roll with some butter.

you can still snack on veggies and maybe add some fruits, but go for higher calorie choices like bananas, pomegrantes, corn, beans, potatoes, carrots even.

Or adding nuts, dried fruit, peanut butter, or oil to any of your meals might help. Switching from skim to a higher fat percentage of milk also, or making smoothies, shakes, or if you really need to drinking boosts or ensures daily.

idk... i'm not really convinced that you are STUFFED. i think it may be in your head. no human could be stuffed on 1000 unless all they ate was just veggies.

 X2 - Undecided  I don't believe it.

The obvious thing to do is increase portions of what your currently eating to hit your daily calorie limit seeing how your so finicky "Morris"

I'm pretty sure that the 1200 a day is an average number, meaning that if you've eaten more calories on another day it isn't going to hurt you to be slightly under in calories on another day to balance it out--especially if you aren't hungry. Listening to your body makes more sense.
