Stuffed Green Pepper low sodium, low fat, low calorie, high fiber

Seeing I eat alone <newly single - not by choice> I have had to adjust my servings etc...and because I am trying to be healthier I have had to re-do old stand by recipes...here is something I made up and it tasted GREAT!

Stuffed Green Pepper <for 1>

 

1.  Green pepper topped and de-seeded

2.  Ground turkey 99% fat free

3.  Black beans

4.  Diced low sodium stewed tomatoes

5.  Diced onion

6.  Diced garlic

7.  Low sodium spagetti sauce

8.  Fat free mozzarella cheese

 

In a frying pan brown the turkey then add beans, tomatoes, onion, and garlic.  Cook medium heat till it looks like its done.  Take the mixture and pack the green pepper full with it.  Top it with spaghetti sauce and a sprinkle of cheese...you can add seasoning however you wish.  Bake 350 degrees for 30-35 minutes till cheese is melted.  Remove let it sit for 1 minute then serve.

 

It turned out great - so good that I plan to make more and freeze them Laughing

This sounds really good and I just bought some green peppers at a swap meet this morning. I am going to write this down and make them this week for the family. Thanks for the recipe.

Actually I was fairly proud that it turned out so good.  The best part was I basically modified it to be lower in sodium, calorie, and fat without compromising the taste.  I could have substituted the spaghetti sauce with a low sodium paste but thought the taste could be a little bitter so I opted for the spaghetti sauce.  Let me know how you like it.

Mmm stuffed peppers. Haven't made those in a while. Although I go traditional/basic route with white rice and with ground turkey, no cheese or spaghettie sauce. I want to try adding mushrooms, but not sure how it will effect things.

I normally did the traditional way as well but for some reason I just wanted something DIFFERENT...I wanted to try and see what it would be like without the rice...as for mushrooms I am fairly positive if you buy the portabellas raw and cook them in the mixture they would be great...I know I cook them with other recipes and they turn out but when I cook with mushrooms its always fresh not canned.   My 2 cents...I will try it for the next experiment and see.

  • spaghetti sauce - 0 fat, 5 cals
  • mozzarella - 0 fat, 5 cals
  • Green pepper - 0 fat, 30 cals
  • onion & garlic - 0 fat, 3 cals
  • Ground turkey - .25 fat, 20 cals

Estimated Total:  .25 fat, 93 cals

I leaned on the higher side of everything that way I couldnt go wrong.

Sounds really good, can't wait to get some ground turkey and give this a try.
