| 1 | cup brown rice |
| 311 | g yellow corn |
| 437 | g black beans |
| 1 | cup salsa |
| 1/2 | cup low fat, cheddar or colby cheese |
- Blanch green peppers for about 5-10 minutes
- Prepare rice
- Add can corn, black beans, salsa, cheddar, mix well
- Fill peppers, top with cheese
- Bake for about 20 minutes at 350 F.
