I found this recipe in a cook book and made it last night. it was so good (and good for you) that I feel the need to share :) I did this as a single serving and side item...but it would be so easy to make a bunch and serve before a dinner party :) also got a A nutrition grade if you follow that like I do :)

Ingredients 6 mushrooms 2 tbsp ricotta cheese, part skimmed 1 clove garlic 1 tsp pepper 1 green onion 1/2 tbsp lemon juice 1/2 tbsp bread crumbs 1 tsp olive oil Directions

- wash mushrooms and pop of caps
- chop garlic, green onion, and the stems of the mushrooms up.
- in olive oil cook all 3 for 2 minutes or until soft
- stir in cheese, pepper, and lemon juice. cook till soft
- stuff the caps with filling and sprickle with bread crumbs.
- cook at 400 for 7 minutes. serve/eat right away
