What to sub for oil in savoury recipe?
I know all about using apple sauce or prune puree instead of oil in sweet recipes, but does anyone have an idea of what to use instead of 1/2 c oil in a savoury zucchini and bacon muffin. I was thinking perhaps an extra egg white, or maybe some natural yogurt. Has anyone subbed oil in a savoury recipe with success?
Here's the recipe...
150 g bacon (chopped) - I used ham as I had no bacon
1 small onion (chopped) - could also use chopped leeks
1 cup of self-raising flour
1/2 cup oil
4 eggs
1 teaspoon mustard (optional)
1/2 teaspoon paprika (optional)
2 cups grated zucchini (approx two small ones)
1/2 cup grated tasty cheese
Even for savoury muffins, you can use unsweetened applesauce. It's not going to affect the taste when bacon is so salty and dominant. They sound lovely!
However, if you're skeptical, you can use 1/2 cup of pumpkin puree instead.
Hmm, we dont get canned pumpkin here so making pumpkin puree would involve buying an entire pumpkin which I dont fancy doing for a bunch of muffins! I suppose I *could* try apple sauce.. it just seems weird!
Any other ideas anyone?
I think yogurt (as you mentioned) or pumpkin (as vron mentioned) would be your best bet. Sometimes you can find frozen pumpkin or butternut squash puree (butternut squash is very similar to pumpkin), so if you don't have the canned kind you might have that.
My only other two suggestions (and I haven't tried either, so I have no idea how they would work): (1) low fat mayonaise; or (2) fat free or low fat salad dressing. I saw both of these things suggested elsewhere on CC, but again, have never tried either.

I think I would try increasing the amount of zucchini and add a bit of the yogurt. The unsweetened applesauce though would also work well with this recipe too without making it taste appley.
I have used fat free miracle whip as an egg & oil substitute in muffin recipes. However I can't recall what the exact substitution ratio is.
(it does not add 'zip' as you would expect to muffins... my recipe is for banana chocolate chip muffins)
Try ground flax seed. You can mix it up with water and substitute for oil and eggs!
Try 1/2 can white pinto beans or kidney beans rinsed thoroughly with water and pureed with 1/2 cup water.

Flax seed and the mayo are good ideas as well. I have no idea what miracle whip is! I'm in the UK!
I use the black beans in brownies all the time for the oil and egg.
