Successful Breakfast Patty Experiment!

Hey everyone - thought I'd share an experiment I conducted this morning that turned out great!

It makes 1 serving (2 patties).  They are crisp/crunchy on the outside, and soft on the inside... mmmm.  Have the consistency of sausage patties - would be great crumbled up in scrambles or on toast...

1/4 cup favorite bran cereal
2 T. Skim Milk
2 T. Egg Whites
1 T. Water
1 tsp. Cinnamon

Put the milk w/ the cereal in a small bowl, and microwave for 20 sec.  The cereal disintegrates and you can stir it into a mush-like paste.  Add the egg whites, and cinnamon, then add water until a pancake-batter consistency.  Fry on a skillet greased with PAM - and that's it!

I put yogurt and fruit on top of mine, but they'd be good with basically anything - eggs, ketchup, cottage cheese, cream cheese, jello, peanut butter, etc. etc. etc.

2 patties = 80 calories, only 0.3 grams of fat, and about 7 grams of protein, so they're really good for you, and a great snack or light breakfast.

Now that's a neat trick!  I'm thinking - blueberries.  Hmmm.

Tahts AWSOME!! I live in a dorm, so I dont have a fry pan, but a s'which press. :D:D Brekkie tomorrow = sorted... wait, I need eggs. *Sigh* Maybe one day!!!
Yeah Claire, I think I might try t again tomorrow with either applesauce or mashed banana mixed in, then topped with yogurt.

Either that, or I'll put in salsa and when it's done frying, scramble up egg with it...  we'll see.  It's a very versatile recipe.
this morning, I tried microwaving the cereal w/ water, then adding a tablespoon of Light n' Fit yogurt before cooking.. worked great, and cut the cals per patty down to 25.

What I did was cook the patty, and once it was browned on both sides, poured liquid egg whites over the top, cook, flipped, then sprinkled pepper on top.  Like egg-toast, but better for you!  Give it a try, definitely.  Had a nice subtle fruity flavor from the yogurt too.
You might also try substituting the skim milk with Almond Breeze, a low-calorie--but really tasty--almond milk that comes in flavors like vanilla. I think that'd taste great topped with fresh berries...I might have to try this tomorrow morning!
