If I were to copy a recipe for sorbet and replace the sugar in the recipe with sucralose...would it still work?

It should. Doesn't taste as good imo 
The texture won't be the same. Try just plain fruit sorbet made with pureed fresh fruit. No added sweetener is needed if the fruit is sweet.
