suggestions for greasing muffin pan
I really want to make blueberry bran muffins, but I dont have any of the paper things to line the muffin pan with. What can I use (thats low to no cals) so that the muffins do not stick to the pan?
Thanks.
cooking spray
Why not just using cooking oil? I mean, for a 6-12 muffin pan, you would use way less than a tsp of oil (I just drizzle a little on a paper towel and then rub the cups with the towel. A teaspoon of canola oil has 40 cals and 4.5 grams of fat, so even if you did use a whole tsp (which I doubt you would), the added cals per muffin would be negligible.
a little cooking oil as described above & sprinkle with a light coating of flour.
I usually use a bit of light margarine. A tiny bit smeared on with a piece of plastic wrap does the job with very few additional calories.
You are talking about a miniscule increase in calories per serving. A tablespoon of real butter is 119 calories. Divided by 12 muffins that's 10 calories per serving added. You'll actually be using less than a tablespoon though and some of it will be absorbed by the paper towel used to spread it. It gives a beautiful crust and flavor too. Coat each cup with butter and dust with a little flour and knock out the excess.

Thanks, using the flour made it really easy to get the muffins out.
