What is summer without pasta salad...dull!  I've gone all season without pasta salad and I've lost weight to show for it but I was really craving pasta salad today.  So for lunch I made a delicious Greek Pasta Salad...I could have used whole wheat pasta, but I had regular left over from the other night.

Here's the gist of the recipe if you'd like to try it!

1 cup pasta

1.5 tablespoons Maple Grove Farms Greek Fat Free Dressing

1 oz Reduced Fat Feta Cheese

1 cup diced cucumbers

6 diced kalamata olives

a little chopped garlic or garlic powder

3 oz diced chicken breast (I used Trader Joes breaded breast tenderloins - 2 pieces for 150 cals...or tofu would be good too!)

2 tablespoons Fat Free Greek Yogurt

Mix it all up and it is magnifique!

that sounds awesome!  pasta is definitely a part of my eating habits.  I think my husband would disown me if we stopped that ;-)

Speaking of summer! Not a pasta recipe but an awesome fruity salad recipe for those hot summers. GUILT FREE! Don't have time to post it so I'm sending a link.

Thank you so much for sharing your Greek Pasta salad recipe!  I have been wanting a pasta salad.  I tried to make one up but it turned out just ok.  Not bad/not great... maybe a more experienced cook could treak it to make it great!

  • Whole wheat pasta
  • Kraft ff Italian salad dressing
  • small amount of fresh shredded Parmesan 
  • cut up Turkey ham left over from the night before

I tried a new pasta salad on Friday night, and everyone LOVED it!  It's from CookingLight, called Summer Black Bean and Pasta Salad

It doesn't have a huge amt of pasta in it, so it's fairly low cal... for 1.5 cups of the salad (1/4th of the recipe), here's the nutrition info - CALORIES 214(30% from fat); FAT 7.1g (sat 1.1g,mono 4.4g,poly 0.9g); IRON 2.4mg; CHOLESTEROL 0.0mg; CALCIUM 47mg; CARBOHYDRATE 35.5g; SODIUM 656mg; PROTEIN 7.3g; FIBER 7.2g

PS - don't be afraid of the pepper in it - at least with the ones I bought, the level of hotness was basically nonexistent.
