I love experimenting with new food/meal ideas so I'll try to get on more to share what I've found has worked for me or not.

I live in Maryland and my family goes crabbing a lot (we live about an hour from the Eastern shore) so in the summer we'll sometimes have picked crab meat in the fridge for making crab cakes, etc.

So the other night my mom made broiled crab cakes which were delish but I wanted to make a healthier version. So for lunch the next day I mixed together 1/2 cup crab meat, 1 tbsp low fat mayo, a squirt of yellow mustard, and old bay seasoning. After it was all combined, I formed a crab cake in my hand and broiled it in my oven for about 7-10 min (until browned on top). I ate it with fat free tarter sauce (ate a salad too) and it was DELISH! I'll definetely be making it again, and maybe this time I will put it on a sandwich instead of eating it plain.

 

Here's another variation of one of my mom's recipes: Summer cole slaw! I love eating cole slaw in the summer with hamburgers and hot dogs but always found it to be made with too much mayo.. and the one my mom makes has a lot of oil in it. So, I did this: mix together 1 1/2 cups plain bagged cole slaw, 1 tbsp (or less) of low fat mayo, 1 tbsp (or less) apple cider vinegar, 1 packet Splenda, salt and pepper. Mix well and enjoy! And only about 40 cals. Gotta love it!

I like that crab cake recipe. I'm going to try that one :D

Does sound nice (I love crab - would happily just eat a crab on its own!)

I have made coleslaw without mayo before, it was very fresh and crunchy, unfortunately I can't remember the exact recipe. I think it involved honey, and perhaps lemon or vinegar.

Adidas19- your coleslaw recipe is very similar to mine except I use Sweet N Low.  It only takes a little bit b/c that stuff is super sweet.  It is the most guilt-free slaw in the world and I can eat a ton of it. :) 

I live in the great MD too!  But...I hate most seafood, so it kind of defeats the purpose.  The only seafood I'll go near is tilapia and shrimp!  But anyway, my favorite summer recipes are quite simple:

1.  Slice up some zucchini, squash, onion, tomato, eggplant, whatever your heart desires, brush a bit of olive oil on it, season to taste, and grill!

2.  Cut up your favorite fruits (watermelon, grapes, strawberries, canteloupe, peaches, pineapple, mango, honeydew, grapefruit, oranges, anything!) and mix up in a giant bowl!  (no need for added sugars, but I've heard if you squeeze lemon juice on the fruit it will stay fresh longer...but I've never tested it myself)

I live in Baltimore and I used to love crab! I still do actually but I am forbidden to eat it for health reasons (it's not an allergy).  If you want something summery free of mayo you should try german potato salad.  It's kind of like your slaw but without sugar...actually there is supposed to be sugar in it, but my mom forgot it last time and it was still delish!

Wow, that coleslaw sounds delicious!
