Cut original recipe in half. But didn't have enough dates. Didn't have room for raisins--to cook in only one loaf pan. Used about 2 c. (about 10 oz fruitcake mix) and 8 oz candied cherries, but to get calories right, wrote amts as seen below.

Recipe Ingredients for SunRipe Fruit Cake, modified 12-12-10

180 g packed light brown sugar
14 tablespoons all-purpose flour
3 large eggs
1/4 cup cooking oil
3 tablespoons lemon juice
1/2 teaspoon cinnamon
1/4 t. baking soda
1 tablespoon dried, pitted dates
10 oz candied cherries
8 oz candied fruit
1 c. chopped walnuts

Recipe Directions for SunRipe Fruit Cake, modified 12-12-10

Blend dry ingredients. Beat in eggs and oil. Stir in fruits and nuts that have been soaked in lemon juice. Press batter into buttered loaf pan. Bake at 250 for 3 to 3-1/2 hours, till toothpick comes out clean. Cool in pan on rack 20 min. Remove from pan and cool completely on rack.
