Hey everyone...just spent the past weekend at the 'rents and my mom made these muffins. ALL they are is one butter pecan cake mix and a 15 oz. can of pumpkin. You mix the two together, spoon into 24 muffin cups and bake at 350 for 20 minutes. They are really good and they are about 91 calories a piece. I believe for Weight Watchers they are between 1 and 2 points. No water, oil or eggs needed....just the pumpkin and the dry mix. Now ANYONE can make these! I just made a batch for my family today because everyone loves them, including my fiance' who hates all diet food. :)

I am going to try that one!! My family LOVES snacks/sweets, so I need some low cal ideas. Thanks for posting this one!

You said one butter pecan cake mix.  What brand?  I don't want to get one that is too high in calories....  I'm a newbie in the baking arena!!  Thank you....

Let me go check the garbage...ok, it's Betty Crocker Super Moist butter pecan. What I did was add the calories for the whole dry mix plus the calories for the whole can of pumpkin and then divided by 24...came to like 90.8888888888 something. Oh...definitely spray some Pam in the muffin cups so they don't stick...the texture is on the sticky side just so you know!

UMMM...sounds wonderful...I have made muffins similar to this only the recipe called for Spice cake mix/pumpkin/applesauce!  They are to die for!

 

MelanieMae:  I read your post this morning and ran out immediatly to buy the ingredients... unfortuneatly for me, our grocery store does not carry butter pecan cake mix. So I bought a butter cake mix instead.Well, I got home and thought, how am I going to pull this recipe off to my 13 year old? So, I decided to mix it with a chocolate cake mix instead.  I licked the spoon and was PLEASANTLY suprised a the taste! YUUUMMMY!!

My question is HOW DO I MAKE THIS A RECIPE?? I found the ID # and entered into the recipe box but it has a yellow flag and says my cupcake/muffins are 6 calories a peice! lol... If only that were true!Wink

Well, the oven is ringing, they are done, cant wait to taste them.. I think i will sprinkle some powdered sugar over them if they need more sweetening.

I just made the muffins and my husband can't get enough of them, they are so good!  They are really good while they're still hot from the oven and kind of remind us of cornbread.  Very yummy.  I wasn't able to stretch it enough to make 24 muffins, but ended up with 16 good sized ones.  :)  Thanks!

If you'll post a link to the recipe you entered, or post all the ingredients exactly as you entered them, I might be able to help you get it entered.

If the calorie count is that low it means the Recipe Analyzer isn't recognizing some ingredients. 

I want to try them, right after my St. Paddys challenge.  Where did your mom get the recipe and does she have any other great lo cal ones?

I've never made any muffins, cause they all seem to be 200 calories and I refuse to eat muffins w that many cals.

ALSO:  poster #5, what is your recipe and how many calories/fat?

I have also made them with chocolate cake mix.  They are super yummy with a 1/4 of a cup of icecream and sugar free Hershe's syrup.  Low cal dessert and give you the chocolate fix.
I am having the same problem posting this recipe.  I found all of the ingred. but the analysis won't accept the cake.  There fore it is only counting the pumpkin 6 cal.

I'm afraid this is one we'll have to do manually.  The Analyzer can't recognize the cake mix, partly because of the non standard unit of measure.

What I would do is take the calories per serving from the dry cake mix and multiply by the number of servings in the box.  Then calculate the calories for the can of pumpkin.  Add the two together and divide by the number of muffins you make.

OMG! I just made these with carrot cake mix and pumpkin and they were soooo good! So moist and delicious.
I just joined CC this week. I stumbled upon this thread while looking for a healthy alternative for Easter dessert for myself. I will treat myself to one of these while everyone else is enjoying coconut cake. I just pulled them out of the oven. They are delicious. I also mixed a little splenda brown sugar and cinnamon and sprinkled on top prior to putting them in the oven.
I like the idea of adding the cinnamon on top but to me they are sweet enough so I would omit the brown sugar splenda.

I have to try this with carrot cake sounds good.

These sound like they would be a great alternative for the sweet tooth!

I made these last night.  I used super moist triple chocolate cake mix and a can of pumpkin.  Really very good.

And yet another reason to thank this site!! i was just craving something calorie affordable and of course sweet.  I am  not sure who to thank for this GREAT recipe idea.  I love pumpkin and have an array of pumpkin recipes.  One of my very best favorets is pumpkin pancakes.  They are so good you do not need anything on top...but you can put some sauted apples.  i am going to see what I have in the cupboard, cake wise, cause I know I have some pumkin.

Just made these last night and I've never had pumpkin before; they are delicious! A question though; is there any way to make them rise up a bit more? They are a bit flat when I make them, though I'm not that good of a cook...
