Super rich and decadent breakfast pudding - only 404cal.

This is a recipe for a rice pudding I made recently. It yields just one small bowl (1 serving) at about 400 calories, but it is so incredibly rich and filling that I just didn't manage to eat more. Breakfast is usually a big deal for me (I'm ravenous in the morning) so this is just perfect for me!

Ingredients:

33g short grain rice (1.3 ounces)
300ml lowfat milk (1.3 cups)
pinch of salt
25g brown sugar (about 1 tbsp)
2 tsp cream
a few drops of vanilla butter flavor (or any other flavor you like)

Combine milk, salt and rice in a small pot, and bring to a boil. Then cook on low heat for about 25min. or until the rice is tender; stirring constantly.

Then add brown sugar and cook for another 10-15min. or until the mixture turns creamy. Keep stirring and be careful not to bring it to a boil. Now add the flavor and the cream. Stir and enjoy!

mmmm that sounds good!

I don't know if it would do me very well for breakfast though. Whilst its a good amount of calories, the white rice and sugar might leave me hungry again pretty soon after. Perhaps a small lunch/dinner with this for dessert would work well too, yummy!

It's really satisfying for me, this might be because of the fat and protein content from the cream and milk. However, the cool thing about this rice pudding is that you can make dozens of variations from it. For example, you can add protein powder, powdered milk, berries, chopped almonds, peanut butter, orange flavor/zest, strawberry jam, honey or whatever you like to make it a balanced breakfast.

I'm thinking about using sugar and cocoa powder, that'd be a nice chocolate rice pudding ... :)

Yeah it sounds a good base for variety, and nuts/fruit in it would keep me going longer I think.

I am loving chocolate oats at the moment - I stir cocoa powder and raisens into oats and it is really good, so i I sure it would work well with rice too with similar results
