Hi Guys,
So I was thinking of some tolls that would have really helped me, that have really helped me, and one of the ones that would have been most useful would have been a collection of recipes, for all meals AND snacks, some high calorie, some not, and healthy ones as well - I've often noticed that a huge clash between families comes because parents/others believe the recoverer should just eat cake and that it what the recoverer often doesn't want to do!  Also, where possible, if these recipes also had calories per servings - if I'd had something like that I could have coked with my mother and gradually released some control in the kitchen, compromising between knowing, and adding it all myself.  I also thought any experiences that people were willing to share would be good and helpful, let people know that, above all, they're Not Alone.  And then I thought, because I only stumbled on this forum and website, that if people were to volunteer this, I'd compile it, and send it all to b-EAT (UK nat, eating disorders help organisation), and they could post it as a resource, and it would be a really good help for other people.  
SO, if people want to put recipes and experiences on this forum that's great...if you want to message me them that's great as well, you can remain anonymous or not as you wish!

Here's my latest, almost 900 cals in one dinner and that doesnt count my side salad :O!! I'm enjoying this right now as I watch the Emmy's Smile, fancy, huh?

And I find gnocchi to be a great weight gaining food since I can eat wayyy more than an indicated serving. I've been known to eat the entire package myself it's soo good and not too filling. Throw on some olive oil and you've got yourself a nice calorie dense meal.

Healthy banana split

- slice banana in half and drizzle on peanut butter or almond butter.

- Top with whole milk yogurt, chopped walnuts or some other nuts, chopped dark chocolate and drizzle of honey.

OR you could add any of the following : ice cream, more chopped fruit ie blueberries, strawberries. Add dried fruit like sultanas, sprinkle on some brown sugar, cinnemon, crushed up meruanges  (sp?) , lemon zest, orange zest with a drop of orange liquor...anything you like.

aloha, I had this for my dinner tonight and it was uber yummy, and I haven't had sausages in AGES (major fear food) so I was all dancy and singing 'et moi je vie mavie a pile au face, tous mes sentiments, a pile au face' round the kitchen to odd odd loks from s.....

Anyway, sort of a jamie adaptation (I love jamie...)

Sweet tomato and sausage bake - serves 1:

250g tomatoes

100g aubergine

1 shallot

1 clove garlic

2tbsp balsamic vinegar

2 tbsp oil (more if you're feeling brave)

herb bag of rosemary, thyme and bayleaf

cayenne pepper, and salt and vinegar to taste

2 LARGE BUTCHERS' PORK SAUSAGES - the best money can buy, baby

Essentially, stick all of those things in a casserole dish without the lidon and the sausages on top in the oven for half an hour at 190, or gas mark 6, remove, give it a shake, turn the sausages, stick it back in the oven for another half an hour.  Then take it out, stick it on the hob and boil any juices away until you get a nice sticky jammy sauce.  Serve with fresh warmed through petits pan, or wet polenta or couscous, a green salad, and a good large glass of fleurie....

Follow with a nice bar of dark chocolate and a dram of Glenfiddich

Zucchini and Walnut Loaf!

(Makes two medium..pfft loaves)

Ingrediants
* 3 eggs (or 1 whole/ 2 whites)
* 3 tsp of Vanilla
* 2 1/4 cup of Brown Sugar (i halved with splenda...no change of taste)
* 3 tsp Cinnamon
* 1/2 cup of Olive Oil
* 2 cups of Grated Zucchini
* 1/4 tsp Baking Powder
* 1 tsp BiCarb Soda
* 3 cups of Wholemeal Plain Flour
* 1 cup of chopped Walnut

- Beat eggs till light and foamy
- Add sugar, vanilla and oil. Beat until thick and mousse like(should leave a trail from the spoon)
- Stir in grated Zucchini
- In seperate bowl, sift together floud, baking powder, salt, soda and cinnamon.
- Fold flour mixture into Zucchini Mixture
- Add Walnuts
- Pour mixtur into lined loaf tins
- Bake in preheated moderate oven ( 180C / 350F ) for 1 - 1.5 Hours or till a skewer inserted comes out clean.
- Cool on rack

Well, I suppose this is where I put my creations! LOL

I love salad, but it's always deemed as a "typical"/weight LOSS dieting thing. So here's what I do. Lettuce - but get the green or red leaf, or romaine...they have more nutrients than ice-burg (in fact, I heard ice burg isn't even really good for you, cuz it's "solid green water"!)  Then I put any (usually all) of the following... shredded cheese (either chedder or parmesan, or both!), sliced meat (usually too lazy to grill chicken, so I just cut lunch meat into strips), a diced boiled egg, mandarian oranges, bacon bits, sunflower seeds, and extra dressing. Obviously crutons or bread cubes are good, but I don't like things that are really crunchy. With everything put in it, can be up to 500 calories... just for a salad!

Just made this (still working on drinking it, actually)..it's about 1080 calories, for a big cup. Kinda tastes like liquid Reeses
4 tablespoons peanut butter (400)
4 tablespoons chocolate syrup (200)
1/4 cup heavy whipping cream (240)
1 can vanilla Boost/Ensure Plus (240)


Haven't tried these ones yet, but I imagine they'd be pretty good. The "Reeses" one was made up, and it was okay (if you like Reeses, which I kinda don't...but oh well)

Strawberry Banana = 450 - 900 (depending on ingredients included)
4 tablespoons strawberry jam (100)
1 banana (100)
1 can vanilla (or strawberry) Boost/Ensure Plus (250)
4 tablespoons wheat germ (100)
1/2 cup ice cream (vanilla, strawberry, pralines, or whatever you like) (150)
Plus, you could add 4 tablespoons chocolate syrup, and I bet it'd taste pretty much like a banana split!


Banana Nut - up to 1000, depending on which ingredients are included
4 tablespoons peanut butter (400)
1 banana (100)
1 can vanilla Boost/Ensure Plus (250)
4 tablespoons wheat germ (100)
1/2 cup ice cream (150)

I just made another experiment. The texture is a bit gritty, but that's because I didn't blend it enough. I figured if I put the oatmeal and juice together first, I could make the oatmeal mushy... maybe I need to soak it first. Or I just looked up "oat flour", and apparently you can make rolled oats into flour by putting them in a blender alone and making them into powder.

Anyway, this tastes nummy! But there's quite a bit...it makes 4 cups. So what I'll do, is just put it in the fridge and drink 1 glass with a meal, and finish it throughout the day.

 

100    8 ounces      &nb sp;     juice (Dole 100% strawberry/kiwi)
480    4 ounces      &nb sp;     heavy whipping cream
150    1 'cup'           &nb sp;    Yoplait fruit yogurt (strawberry/banana)
150    1 cup           &nb sp;      oatmeal (not instant, just rolled)
50      2 tablespoons    wheat germ
100    1 whole           &nb sp;   banana
240    1 (8 oz)                Boost (vanilla)
--------------------------------------------- ---------------
1270    4 cups (32 oz)    total

Obviously, you can use different flavors of juice, yogurt, Boost/Ensure, and other real fruit. This is just what I had available this morning.

For vanilla milk shakes

  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 pint vanilla ice cream
  • 1 teaspoon vanilla extract

Hey everyone, I know these aren't original, but I was just looking to find some pb and co coupons on the website and started looking through their recipes and was struck by how decadently yummy sounding and high calorie all of these probably are. Plus I know how much everyone here loves PB!!

I'm sure you don't have to use their pb flavors either, any regular nut butter will do. I want to try the baked french toast and mousse!

  • Macaroni and Cheese from the box (or homemade) with heavy whipping cream and plenty of butter.  You could even add extra cheese!

 

  • 1000 + calorie muffins:

Ingredients:

1 stick butter (8 tablespoons)
1.5 cups sugar
2 eggs
2 cups flour
1 teaspoon salt
half teaspoon baking soda
1 cup mashed banana (I use 2 bananas)
half teaspoon vanilla
half cup sour cream
plenty of chopped walnuts or pecans (I don't measure these, but probably put in at least 2 cups)

Mix together the butter and sugar, then the eggs. Mix together the dry ingredients first, then add to the butter/sugar/egg mixture. Next add the banana, sour cream, and vanilla. Last add the nuts.

I put all of this mixture into a non-stick pan that has 4 LARGE muffin tins. That is key. Just make a huge muffin look like the normal size...none of this small cupcake sized muffin business!!! Each of these muffins should have about 1000 or more calories. And they are delicious! 

350 degrees for just long enough to cook them so they stay really moist.  In my pans it is 45 minutes

  • Heaping serving of pasta and pesto, washed down with chocolate whole milk
  • Chocolate-Peanut Butter Shake, 1070 calories:

    1/2 c. heavy whipping cream; 3 tablespoons creamy peanut butter; 3 tablespoons chocolate syrup; 1 1/2 c. chocolate ice cream; Blend in blender.

     

    Macaroni and Cheese

    4 cups cooked elbow macaroni, drained 

    2 cups grated cheddar cheese 
    3 eggs, beaten 
    1/2 cup sour cream 
    4 tablespoons butter, cut into pieces 
    1/2 teaspoon salt 
    1 cup milk 

    Preheat oven to 350 degrees F.  Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

High Calorie Oatmeal

INGREDIENT       ;       &n bsp;        ;       CALORIES
1/2 cup oatmeal      &n bsp;        ;       &n bsp;      150
1/2 cup heavy whipping cream      400
1/3 cup water (to make it less thick)
1/4 cup raisens      &n bsp;        ;       &n bsp;        ; 130
COOK THIS  2-3 minutes in microwave
Add:
1/4 cup sunflower seeds or nuts     200
1/2 banana      &nb sp;               &nb sp;                50
1 scoop protein powder      &nb sp;           100

 

Risotto Rice Chicken Alfredo

Prepare risotto rice per package directions (sauté onions in butter and olive oil, add 1 c risotto and add 3 c chicken broth one cup at a time until absorbed)

Put rice into buttered glass baking dish 

Cover with ½ jar ragu Alfredo sauce (or what ever kind you like)

Put boneless skinless chicken breast on top (or chicken thighs)

Cover with remaining Alfredo sauce

Bake at 350 for 45 min to 1 hour until nice and bubbly and the chicken is done.

 Moosewood Cookbook Banana Bread

 

3 sticks of butter or margarine

1 ¾ cups brown sugar

4 eggs

3 tsp vanilla extract

1 tsp Orange rind

4 cps flour

1 tsp salt

½ tsp baking soda

1 TBS baking powder

1 tsp all spice

2 tsp cinnamon

2 cps pureed ripe banana soaked in 1 cp strong black coffee

¼ cp lemon juice

Pecans or walnuts

 

Preheat oven to 350. Generously grease 2 standard sized loaf pans or 1 9X13 oblong pan.

Beat together butter and sugar. Add eggs one at a time.  When mixture is fluffy sitr in vanilla and orange rind and lemon juice (optional).

Sift together dry ingredients. Add this to butter mixture alternating with the banana mix, beginning and ending with dry mixture. Add walnuts/pecans.

Spread the batter evenly in the pans and bake 40 – 50 minutes.

 

Egg Frittata

bag of frozen spinach + frozen chopped onions in a 9x12 pam sprayed cake pan in 375 degree oven for about 10 min to defrost
add jar of sliced mushrooms if you like (drained) + 6 links of sausage cut into bite size slices put back in for another 5 min or so
cover all of it with the eggs (12/18 eggs or 24/32 oz of egg beaters -depends on how thick you want it)
sprinkle seasoning (salt, pepper, mrs. dash extra spicy) and parmesan cheese over top and bake for about 20-25 minutes till it poofs up (not liquidy at all)

 

MARSHMALLOW CRISPY SQUARES: Ramped Up Version of Old Standby
(deceptively light and intensely caloric as well as easy to vary)

This recipe fills 2 9" square glass baking dishes & takes 5 minutes to make!

Microwave in deep glass bowl 3 8 oz. bars of butter & 32 marshmallows.
Whisk until marshmallows are completely dissolved.
Add 6 c. rice crispies or equivalent volume of granola
1/4 c. peanut butter or Nutella
1//4 c. crushed cashews or other nuts (optional).

Stir until all ingredients are well mixed.
Pour into buttered baking dishes and freeze for about an hour.
Can be kept in fridge once solid. Travel well (school lunches) wrapped in foil.
To serve, cut into squares, wedges or fingers.
Allow refills on demand!

This isn't a super huge calorie side dish, but it's one of my summer favorites, and as it turns out, pretty decent in calories! It's a summer pasta salad, with 182 calories per cup, which is the same as one of the yogurts I eat.

This smoothie is not THAT high cal, but I found this to be a really easy way to pack in some extra calories without making me feel any fuller:

Chocolate Banana Malt:

-1 c. Whole Milk

-1 packet Classic Chocolate Malt Carnation Instant Breakfast

-1 medium frozen banana

Put the ingredients in the blender with 3 ice cubes, mix, and drink up!

 

ive been trying to make eating fun i brought one of those electric whisks im trying to drink as much milk as i can as i have osteophrosis and need to repair my bones so for snacks i whisk the milk up till its all frothy and leaves you with a tashSmile then i add squirty cream and a few mini marsmallows lovely h x

That sounds great!  I bought something similar at target (aerolatte milk frother) for about $10 a while back to save money.  You can make lattes or cappuccino's and they taste sooo good!  And they're so much cheaper than starbucks.  If you buy a small latte at starbucks every day you'll waste about $1100 a year!  

To make these yummy drinks weight gain friendly, use whole milk, cream, 1/2 and 1/2, or coffee creamer.  You can also buy flavored syrups (like vanilla or hazelnut).  The kind I use (vanilla) has 70 calories for 2 TB.  You can also add chocolate syrup, whipped cream, sprinkles, espresso, whatever you like!  

And if you want to make it more nutritious, instead of milk use Ensure or Boost Plus.  Or you can stir in some protein powder to the milk before you froth it.  Oh, and it usually works better if you heat the milk, then froth it.

i have a sweet tooth and love mullerices , they are good for snacks i also have baked apples with custard as sometimes i get very sick of yogurts im trying to be more versatile with my cereal at supper i love rason wheats , i discovered golden grahams seriously cinnamon which are really nice i do like rice crispes although they arnt very good if your starvingSmile

warburtons do a nice fruit loaf to called rason loaf which is good for snacks
