I have never been fond of sweet potatoes but everything i have had them in has been well sweet.  I am not big on the sweets.  I was wondering if anyone has a savory sweet potato recipe I could try.  I want so much to like them but am not sure how to cook them.  I am a professional cook but here in the northwest we don't use a lot of sweet potatoes for things except for thanksgiving lol.  Let me know.

My favorite is as follows:

2 pounds sweet potatoes, cut into 2-inch chunks (peeled if you like but not necessary)
1 large sweet onion, cut into 2-inch chunks
3 strips thick-sliced smoked bacon
pepper to taste
fresh or dried thyme leaves to taste

Brown bacon in skillet until crisp.  Crumble and reserve.  Drain off all but 1 tbsp (maybe 2 tbsp if you have more than 2 lbs of potatoes) of bacon grease.  Toss potatoes and onions in bacon grease.  Add seasonings, toss to coat.  Roast in 400 degree oven in single layer on baking sheet or in large roasting pan.  Sprinkle with crumbled bacon before serving.

(If you don't want to use bacon, 1 tbsp of extra virgin olive oil also works just fine.)
I make sweet potato oven baked fries at least once a week. I think I am addicted. I like them sweet, but vastly prefer them in savory dishes. Good luck!
I'm not a huge fan of sweet potatoes at all, but that looks good, rsauvageot!  I'll have to try that sometime!

I've been trying to make a sweet potato "fry" for 2 weeks now..they always come out soggy and mushy...any way to make them crisp?? I tried Olive Oil and Egg Whites to coat them...and I've tried broiling to no avail. HELP!! :)

 

I follow the recipe I mentioned in post #2 (above). You dredge the fries in egg (just the white would be fine, but I'm lazy) and then coat them with the breadcrumb mixture and bake them at a fairly high temp. The most important thing is to not crowd the fries on the baking sheet - I actually take the time to lay them all out individually so that they don't touch at all. It's a pain, but it's the only way I've found to get a really crispy fry.

I do kind of bunch them up on the pan. I'm using a stone, too...maybe that's what's making them soggy? I'll try the bread crumbs also and see if that helps. Thanks! 

I do them most simple way I can.  I stick one in the microwave for about 3 or 4 mins til they are halfway done (I like things quick) pull them out and let them cool while I slice up an onion and garlic and start to fry them in then the pan  I spray or use a tiny bit of canola in,  When the onions are half wilted I slice the sweet potatos into half inch chunks. and then sprinkle a bit of salt, and mrs dash in the pan and start to fry them with the onion and garlic, then I flip them over and brown both sides.  Sometimes I use OldBay seasoning instead.

I use this as a side dish to chicken or fish and it is wonderful a combination of sweet and savory.

what's really good is caramelized sweet potatoes (brown sugar, butter or margarine, lemon juice) I follow a loose recipe when I make them so if you wanna taste, you should probably look up a proper one...basically try brown sugar and sweet potatoe together....such a delicious dessert
