Since beginning my diet, I have been eating sweet potatoes everyday, literally. It satisfies my sweet tooth and is low in calories. Is it okay to do this? Thanks for responding in advance!

Sweet potatoes are very healthy and full of vitamins and fiber. As long as they fit into your calorie allowance for the day, why not?
I go through periods when I eat sweet potatoes daily and it never affects me adversely. I do get a lot of noticeable benefits, however, especially with fiber. I usually eat carrots every day of my life and it hasn't hurt me. In fact, I've done this for two years. I think that as long as you are getting other necessary nutrients from other sources, you are fine. Just don't exclude other fruits and vegetables.
Assuming you are eating baked or boiled (or even, I suppose, canned in water) Sweet taters, I see no reason why you should be worried. Most food cravings peter out after a few days or a few weeks. And Sweet potatoes are really tasty, nevermind being full of lots of good nutrients.
I love sweet potatoes. A while ago after checking my analysis I started freaking because I noticed I was consistantly eating about 300% for daily vitamin A. I did some research and found out that too much is bad. After further investigation though I discovered that it is impossible to over dose on vitamin A from vegetables. The only time to wory would be like vitamin A added in, i.e. milk and yogurt. So, big relief, I get to eat as much as I want. Yummy=) Enjoy!

There are so many threads on sweet potatoes and I chose to bump this one up to get a few questions answered before dinner tonight, so help please!
I went to the grocery store earlier and bought a really really big sweet potato...My question is, is there a way to cut the potato in half while its raw and cook half tonight and say half tomorrow??? Will it cook okay like that??
ALSO, I usually just put my potatoes in the microwave in a plastic bag and heat them up that way...but im curious since im cutting it in half would it work the same or should i put it in the oven to cook?

not assuming, I've cut them in half before and they cook up fine in the microwave. Just refrigerate the unused half, it will be fine.
