Sweet Potato and Peas Recipe

Makes 1 serving


based on Nigella Lawson's 'Back from the Pub' recipe, replacing new potatoes with sweet potato and the bacon with a vegetarian substitute. Can be made in a single pan.

Ingredients
2 rashers vegetarian 'bacon'
8 oz yam, chopped into chunks
2 oz peas
1 large egg, beaten
1 oz cheddar cheese, crumbled into the egg
2 tsp olive oil
Directions
  1. Boil the sweet potato for 15 minutes or so, until nearly cooked.

  2. Add the peas for the last 5 minutes.

  3. Drain and set to one side.

  4. If making in a single pan, dry the inside quickly!

  5. Heat the oil and add the 'bacon', frying it for 1 minute.

  6. Add the sweet potatoes and peas and cook for 2 minutes.

  7. Add the egg and cheese mix and stir vigourously for a minute or so.

  8. Serve.
