Sweet Potato Skin?

Lately I've found myself really loving sweet potatoes. I usually just rinse/wash it, wrap it with a wet paper towel, stick it in the microwave for a few minutes, and then bake it for 10-20 minutes.

When I eat it, I usually just have the skin with it. Is that okay?

thats okay, but your losing out on alot of nutrition. most of the fiber of a veggie or fruit also comes from its skin, so itd try to eat if i were you, but if you dont like it, you dont like it, sweet potatoes are still nutritious either way.

I think you misread. :P I do eat the skin; I actually quite like it. But normally when I see people eating sweet potatoes or baked potatoes in general, they leave the skin.

ofcourse u can eat the skin!  i eat the skin on acorn sqush too, just wash it

People go to the trouble of doing a lot of silly things just because they heard somewhere that it was a good thing to do.

I always have the skin on mine.

Personally, I think it's weird when people leave the skin when they eat potatoes of ny kind. My mom does it and I always tell her that's the best part. Some people just don't like the texture I guess. 

But yes, that's perfectly ok.

I know it's bad!  I just think the skin tastes and feels funny.

i peel off the skin too...i have a hard time with the texture of it....however i do eat the skin of a baked poatato... we humans are odd creatures!

Steamed (microwaved?) sweet potatoes are a really popular all-year-long snack/sweet in Japan.  Everybody eats it with the skin on. 

I doubt that the skin on will hurt you.

Nothing wrong with eating the skin... it's very good for you (as long as you washed it first! lol) Some people don't enjoy the texture, but it has a fair bit of fiber in it.

i always eat the skin. Yum yum!!

the only thing would just be to scrub it really good before cooking and other than that your set.

PS- what do you put on your SP?

i usually put either cinnamon sugar, cottage cheese, or marshmallow fluff :)

I've actually just been eating my sweet potatoes plain. I do like adding some cinnamon on occasion though. Cottage cheese sounds like it would make an interesting addition. Marshmallow fluff and sweet potato sounds delicious!

I went through a sweet potato phase where i absolutely had to have a sweet potato every single day. If I had to work that day id eat one for breakfast. Id just nuke mine in the microwave and put some spray butter on it. But i always eat mine with the skin. The skin is kinda the best part to me lol I always get weird looks when im eating it tho.

I eat the skin too. Just some sweet potatoe with a little salt. mmm SO good. Especially if roasted properly. I actually crave the skin of sweet potatoes and idaho potatoes. I've made the potatoes just to eat the skin before, and rid of the flesh :) I'm odd.

I looove sweet potatoes - skin and all. And I found a yummy sweet potato fries recipe that I'll share here. The paprika and the cinnamon really give it a delicious flavor. I usually just cut up 1/2 - 1 large swet potato for me and my husband and adjust the spices accordingly (e.g., I use 1 tbs olive oil). Enjoy!

Oven Baked Sweet Potato Fries
serves 4-6

1 - 1 1/2 lb sweet potatoes
1/4 cup olive oil
1/2 tsp kosher salt
1/2 tsp paprika
1/4 tsp cinnamon

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).

Peal the sweet potatoes. Cut into strips that are about 1/2 inch wide on each side.

Place the sweet potatoes into a sealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer.

Cook for 30 minutes, turning every 10 minutes. Transfer immediately to a paper towel lined plate and serve warm.
