When you bake them, what temp do you use in the oven? And how long? Also, do you wrap them in foil? Or can you just "bake" them in the microwave? I usually boil mine and then mash them with some cinnamin - like mashed potatoes but better. However, I'd like to try baked... sorry this is a dumb question!
Well, this is my first post, and I am here to say that I have recently discovered sweet potatoes and am absolutely in love with them! I read Superfoods Rx, which I would highly recommend, and it has this amazing recipe in it for sweet potato fries! Basically, you cut the sweet potato into 1/4" slices, spray with a little olive oil, and dust with salt, red pepper, paprika, and some other spice that gives it a kick (sorry, I'm at the library and can't remember), put them on a baking sheet and put them in the oven at 400 degrees for 20 minutes, flip for another 15, and when they look done, they are. My roommate and I eat them at least once a week with our turkey or salmon burgers (those recipes also in the book).

I bake mine on a baking sheet lined with foil. 400f oven for about 30 minutes, depending on the size of the sweet potato. It's done when the tip of a knife slides in easily all the way.
Clairelane, do you keep the skin on when you bake it?
I recently cut some into 1/8-1/4" thick disks and saute'd them in a splash of olive oil w/ salt and pepper, beats the heck outa normal fries any day!
My wife will also use them in the old potato casserole recipe you always see at parties and big family functions. just substitute about half the diced potatos w/ diced sweet potatos. We get compliments every time.

Cut them in small cubes, wet it, nuked it for 2-3 minutes (depending on the power of your microwave) until cooked. Topped with powder ginger (or cinnamon) + raisin + almonds.

What is the best way to store them? I buy mine at BJ's in a net bag with about 9 small sweet potatoes in it...within a few days the skins are all wrinkly and they look like they are going rotten! I heard they aren't supposed to go into the fridge. I don't know what to do with these to keep them fresh longer.

corralled -- Aren't sweet potatoes yummy!! Do not store sweet potatoes in the refrigerator ? the core will turn hard and develop an unpleasant taste. To keep sweet potatoes fresh, store them in a dry, cool (55 ? 60 F) place, like a pantry or garage.
