| 3 | tsp baking powder |
| 1 1/2 | tsp ground ginger |
| 1 | tsp baking soda |

| 2 | large eggs, lightly beaten |
| 1 | cup sweet potatoes, cold mashed |
- In a large bowl, combine all ingredients.
- Fill greased muffin pan to use up all the batter over 12 muffins.
- Bake at 400 degrees fahrenheit for 15-20 minutes or until a toothpick comes out clean.
