Sweet Potatoe Muffins Recipe

Yummy baked goods.

Ingredients
1 1/2 cup whole wheat flour
1 cup splenda
3 tsp baking powder
1 1/2 tsp ground ginger
1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
2 large eggs, lightly beaten
1 cup sweet potatoes, cold mashed
Directions
  1. In a large bowl, combine all ingredients.

  2. Fill greased muffin pan to use up all the batter over 12 muffins.

  3. Bake at 400 degrees fahrenheit for 15-20 minutes or until a toothpick comes out clean.
