sweet potatoes and black beans?

Quote  |  Reply

It's that time of year where baked sweet potatoes (and butternut squash) become my lunch staple.  I am trying to add protein to this lunch fav and would love to hear some ideas.

Also, do you think black beans and sweet potatoes would go well together?  If so, any suggestions of how to put them together? 'Cause I think they both sound good and would like to try something.

Oh, also, I try not to eat dairy products such as cheeses and butter.

Two nights ago I made a butternut squash stuffed with onion, "sausage" and edamame. The recipe is on my website:

black bean and sweet potato burritos!!

dice some sweet potato, finely chop some onion, and mince some garlic.

boil the sweet potatos in water.

in a saucepan saute the onions until translucent, add black beans, some veggie stock or water, garlic, chili powder, cumin, and salt and pepper to taste. simmer uncovered for 15ish minutes.

drain sweet potatos, return to pot and mash, set aside.

once the bean mixture is done, mash this too. spread some salsa on a tortilla and spread equal parts mashed sweet potato and equal parts black bean mix. if you aren't vegan you could add a sprinkle of cheese.

yummy yummy.

Mmm...both ideas sound great, Thanks!  I just knew black beans and sweet potatoes would go together.  And you can't have enough good suggestions for squash!
