So, I just cooked and ate my first ever baked sweet potato and it is AMAZING!!! I have had sweet potato casseroles before and thought they were ok, too sweet and the texture was weird or something, but this is so good! I just cooked it in the microwave, put a little light butter/margerine, 1 packet truvia, cinnamon, salt, pepper, and some bacon bits. It is so yummy! I love the salty and sweet combo!

Anyone else have some good sweet potato recipes?

I love sweet potatoes just roasted in the oven (double wrapped in foil) until the naturally sweet juices start to form and flow. Then I add a small tad of butter and some pecans. Heaven. If you add too much butter because your calories allow it that day, it's like eating a pecan pie. :D

I love sweet potatoes!  I'll take them any way I can have them but my favorite is cutting them up into 1 1/2 inch cubes, and roasting them in a very hot oven.  I, however, stay away from "sweeter" preparations: I prefer things like crushed red pepper flakes and herbs like rosemary, thyme, oregano on mine :)  And I absolutely love sweet potato oven "fries" dipped *very* lightly into Thai peanut sauce!  I guess it's something about the sweet-spicy-savory combo that gets me!  

Peel and cut up into 2" pieces and steam until tender.  Mash with a very small touch of butter, salt and some cinnamon.  No other sweetener required.  The come out smooth and creamy and they freeze well.

I love sweet potatoes! I usually bake them and eat them plain - they're so good as they are! I also like to julienne them, toss in a little olive oil, salt and pepper, and bake as fries (they don't really get crispy, but they're still so good). I also like them in lentil stews, or mashed with kale.

Baked sweet potato fries with a bit of Cajun seasoning!

Prick it with a fork a couple of times, rub the skin with olive oil, and bake at 400 for about an hour (no foil) with a pan underneath to catch the drippings.  Split open, add a little real butter and mix it in, then top with a spoonful of marshmallow creme/fluff.  Put it back in the oven for a minute or two to toast the marshmallow.

So very, very tasty.

Thanks everyone for the great ideas! I'll definitely be trying some soon! It's such a healthier alternative to a frozen dinner!

I love to dice up the sweet potatosand mix them w. garlic, onion, salt and pepper then toss everything with olive oil and roast in foil on a grill. make sure the foil is properly greased and stir the potatos so they dont burn. Temp is usually around 400 and I cook them till tender.

I've had baked sweet potato before and I had it with a little honey on top.  That was yummy.  You could probably also halve and boil them...which I would do with the skin still on [love that fiber :)].  Then either mash or eat with whatever toppings you crave.
