Sweet Potatos

OK, I LOVE Sweet Potatoes.  But of course I love them with lots of brown sugar and butter.  I am looking for new, "Healthier" ways to prepare sweet potatoes.  Any Suggestions??  Thanks!!!

Mmm.. I like to bake them, mash them with a little milk (just use a fork) and put cinnamon and honey on. I skip the honey sometimes though. =3

They're really good with peas.

Cinnamon is awesome, also try garlic salt, or just regular old S&P.
Rub a whole sweet potato threw a grater, and make hashbrown with it. Use non stick pray instead of butter or oil, and just sprinkle some cinnamon on it when it's done. Satisfying and super healthy, you dont even notice the skin and get all the fiber from it.

 garlic pepper will add awesome flavor to almost ANY vegetables.

I just like spray butter on mine, although I was on a kick for sweet potatoes like 2 months straight so know I don't even want to look at one!

I like mine with Splenda and cinnamon!  And there's always Splenda brown sugar.

I find sweet potatoes to be more than flavorful enough without adding stuff to them, but thats just me

Sometimes I could suckerpunch the person who invented the need to top everything (salt, pepper, butter, sugar, etc) why cant we just eat thingsnaturally?

I love sweet potatoes:

1. Mashed with real potatoes (1 sweet potato for about 4 reg potatoes) and topped off with onion fried up in a little olive oil.

2. I also use sweet potatoes in the oven with other veggies to make a nice side dish to protein (so cauliflower, carrots, green beans, a potato, onions, a tomato and sweet potato, seasoned with a little olive oil, salt , pepper and oregano)

3. Sweet potato and acorn squash soup: 1 sweet potato , 1 acorn squash, about 4 carrots, 2 onions, 3 tomatoes, 1 red pepper, maybe a parsley root (if u like the taste) cook in a big cooking pot with 2 tbspn of olive oil until slightly sofetened. Then add water until slightly covering all the veggies. Cook until the veggies are compleatly soft, then blend with a hand blender - Sooo Easy, Soooo Delicouse! When I serve I like to add a little (1/2 teaspoon) of pesto sauce and just a touch of chilly infused olive oil.

I put a little bit of "I can't believe it's not butter" on mine, delicious!
Is there a tool that cuts french fries? My bf loves sweet potato fries so I try to do it healthy by baking them for him byt they are SO hard to cut up....without sending pieces flying in every direction (thank goodness for the 5 second rule!Tongue out)
Hmmm, I have never had a problem cutting them up (but my knife is pretty sharp)...maybe trying putting in a microwave for 30 seconds first would help soften them for you to cut.

You can use them as a filling for burritos too - it's a little high calorie but obviously better than fast food or take out.  This is my favorite recipe...http://www.fatfree.com/recipes/mexican/sweet- potato-black-bean-burritos

It makes a LOT of burritos, but I freeze half and that way I have them on hand when I need a quick fix.

Cut them into small squares, with the skin on.  Toss with sea salt, pepper and fresh thyme.  Place on a cookie sheet sprayed with oil and roast at 350 for 40 minutes or so.  You can eat them plain like that  - or you can make a dressing for them from walnut or macadamia nut oil and fresh lime juice (2 parts oil to 1 part lime juice) and toss a little over it.  Serve at room temperature.  DELICIOUS!
I like to stick them in the microwave, then eat them with either ButterBuds or I can't beleive it's not butter Light. Plain and simple, but really tasty.
I LOVE them too- I just discovered them and they're amazing.

A low cal option I've found is to not put any butter or shortening on it before it goes in the oven, and then when they're done put a dollop (or a couple) of FAGE 0% yogurt and cinnamin on top. Tastes just as good as the brown sugar and the FAGE only has 120 calories per CUP, so you're set.
Some of the best sweet potatoes I have ever had have just been plain-old oven-roasted.  If you can find high-quality sweet potatoes their flavor is fabulous without any butter or sugar (plus the roasting process caramelizes the natural sugars and makes it extra yummy.)
