Tabouli based on Moosewood cookbook

Recipe Ingredients for Tabouli

1 cup bulgur wheat
2 tomatoes, medum
1 cup parsley
3 T olive oil
1 clove garlic
1/4 cup lemon juice

Recipe Directions for Tabouli

  1. Boil bulgur wheat in 1.5 cup water. About 5 min. Turn off stove and cover with lid. Sit for 15 min

  2. Add 1 t. salt, lemon juice, garlic to the cooked bulgar wheat

  3. Add finely chopped parsley and diced tomatoes.

  4. Marinate in refrigerator for 2-3 hours
