Let's talk about muffins
Muffins have been my number 1 indulgence lately - but 300 calories for "low-fat" and 400+ calories for regular has been pretty hard to fit in! I've been doing it but it's been tough. They're not nutritionally void, at least the apple cinnamon muffin I had yesterday had like 8 grams of protein - the problem? 32 grams of sugar!!! Yikes!!
Anyway, I want to make some muffins to grab for breakfast. I want them to be high protein but I don't want to use protein powder. I'd like them to be 250 cals or less for a breakfast treat.
Anyone have a muffin recipe or muffin-related advice?

I'm pretty sure Trader Joes has some high protein/fiber muffins.
VeganDad's blog has a ton of good muffin recipes, including protein power muffins (made with walnuts, quinoa and hemp seeds, not protein powder) and maple banana walnut muffins. I put these in CC's recipe analyzer and they have less than ~250 cals per muffin.
I also LOVE these vegan carrot spice muffins and zucchini muffins. They aren't as high in protein but they turned out really well when I made them.

They taste great and are packed with vitamins. forgot to tell you they are only 100 calories and a good size.
I love the chocolate, the banana nut is ok and the corn muffins are good.
The banana was just revamped so is probably a lot better now. I didn't care for the other fruit muffins.

I just made these..
2 ripe bananas - 275 grams
1 whole egg
1 teaspoon baking soda
5 grams sugar
75 grams 100% whole wheat flour
I made them into 18 mini muffins BUT you can easily get 6 good sized ones... each of these (making 6 regular size muffins) will be 97 calories..
I watch the amount of sugar that I consume so the sugar content in these is low but you can add some more sugar if you like or play around with other ingredients like honey, vanilla, raisins, cinnamon, etc.
Word of caution, when using whole wheat flour try to stir the mix as little as possible.. mash the bananas, and add all the other ingredients, except flour and mix well. Add the flour last and fold a couple of times or until the flour has dissappeared. Don't over bake either so they remain moist..

i make my own muffins all the time at under 200 cals (quite large) and with wholewheat flour and fruit fillings and groundnut (peanut) oil. i adapted the weightwatchers recipe.

hahaha, I've heard vitamuffins mentioned a lot on these forums and I read hungrygirl so I saw it there but my mom won't order things online. She's very supportive of my healthy ingredients and buys me whatever ingredients I need as long as they're available at the supermarket or farmers market, which is generally pretty generous. Plus I think it's more sustainable, like am I really going to be ordering PB2 the rest of my life? I don't know, I just always feel like I should learn to use regular food first. Plus I like to bake, it's fun :)
does anyone have uncle wally's smart portion muffins at their wal mart or grocery store? mine use to have them then one day just like that ...gone! I love them! They have blueberry, bannana nut and chocolate brownies! They come in single serve packages and are the same size as you would make at home for 80 cals I think and 3 or 4 grams of fiber and protein each. You should try them if you can find them, and if you do please let me know where to get them!!!! I miss them so much, they are moist and sweet and convient without the sacrafice of high cals and fat they are only 1.5 grams of fat per muffin too!

I bought VitaMuffins in the store and they were horrible. Not only were they expensive, but they tasted awful and I end up throwing them out. I also wasn't fond of the PB2 (chocolate version) and have 4 freaking jars of it taking up space here. I totally agree with you about learning to use regular food because afterall, who knows if these other products will even be around years down the road.
As for a muffin recipe, I made some corn muffins this morning using a Marie Callender's mix and added 90 grams of fresh chopped cranberries to it. They came to 154 cals each (it made 12 med/large), but I am guessing you could add some nuts to up the protein and some bran to up the fiber and it would come out to around 200 cals. Good luck!
Go to BHG.com (Better Homes & Garden) website and look under healthy foods. I just got a recipe there for Oatmeal-blueberry muffins that are 160 calories. I'm going to use cranberries instead since that's what I have and the recipe analyzer told me theres only 154 calories if I do that. Mmm Muffins. Another place to look is at QuakerOats.com. You have to really look hard, but I found a recipe for zucchini muffins, and banana nut muffins. The recipes are out there, you just gotta search. Another good web site is AllRecipes.com. I go there every day and am always finding foods that I can make healthier. You can add wheat germ or flax seed to these also. Good luck in your search!

I replaced the sugar with Splenda and the muffins are now only 60 calories a piece. Maybe you could add some protein powder to the recipe??
I abolsutely LOVE muffins. Almost everyday I have a vitamuffin or 1/2 of muffin from Whole Foods. I also love the Dunkin Dougnuts pumpkin muffin, but only have half of one of those every once in a while. I find cutting them in half to a more normal portion has been extremely effective and is economical because then you get two for the price of one lol....
