Recipe Ingredients for Tania's Waldorf Chicken Salad
| 1 1/2 | chicken breast, meat only |
| 1/2 | cup fat free mayonnaise |
| 1/8 | cup chopped celery |
| 1 | tbsp chopped onion |
| 1 | cup chopped apples (green) |
| 1/4 | cup chopped walnuts |
| 1/2 | cup shredded monterey jack cheese |
| 3 | tsp mustard |
| 1/2 | tsp salt |
| 1/2 | tsp pepper |
Recipe Directions for Tania's Waldorf Chicken Salad
- Season chicken breasts to your liking and roast in 425 degree oven for about 1 hour, or until desired tenderness. Or you may just purchase a roasted chicken from your local supermarket.
- Shred chicken and discard skin and bones.
- In a large bowl combine all ingredients and add salt and pepper to taste.
- Serve over a bed of lettuce, in a sandwich, or by itself.
- Enjoy.
