I need some good easy, quick and tasty egg recipes for breakfast.  Anyone have any for me?

I love eggbeater omlettes with fat free cheddar cheese and deli turkey
Here's a few of my favorite egg dishes, very simple, but satisfying:

1. Scramble some eggs with some salt and black pepper, toss in some chopped spam, then some white sticky rice. Top with some ketchup (optional).

2. Scramble eggs, toss in some chorizo (mexican sausage), some spanish rice, very little red pepper flakes and little hot sauce (optional). While that's frying, warm up some corn (or flour) tortillas and fill it with the egg/chorizo/rice mixture. I LOVE the flavor of the chorizo in this!

3. Simple egg mcmuffins:

-Fry up a couple eggs (however many you like) in over easy style (try not to break the yolk, unless you don't necessary like runny yolk). Season with salt and pepper.
-While that's frying, toast some english muffins then moisten with mayonnaise and put a couple slices of cheese on there (whatever type you like, I prefer extra sharp cheddar).
-Once the eggs are done frying, put it directly on the cheese so it melts, then top with your choice of meat (I like spam, or breakfast sausage. Some people like spam or hotdogs.) If I'm able to leave the yolk unharmed, I like to poke the egg until the yolk runs and soak it up with the other half of my english muffin.

4. Saimin (also known as "top ramen"):

-1 package saimin (top ramen) noodles (with seasoning inside)
-boil noodles, then maybe a couple minutes before it's fully cooked to your liking, put in maybe one or two [already beaten] eggs and stir until it's cooked
-toss in some chopped spam (raw - it will cook with the eggs and noodles-
-pour in packaged seasoning that comes with the top ramen, mix in with everything
-lastly, cut up some kamaboko (japanese fish-cake like thing) and toss it in there as well, let it warm up with the rest of the stuff, then cut up some green onions and toss it in as well
Pot stickers work really well in this too! Of course, this particular meal isn't for everyone, as they may not like some of the ingredients (i.e, spam and kamaboko).

5. You can never go wrong with omlettes! You can mix just about anything. Most people use eggs (of course), some kind of cheese, and some kind of meat. Some people also like to throw in some random herbs and green onions and such. Can't go wrong with exploration and experiments with omelettes!

Custard French Toast 

Beat a whole egg, or 2 egg whites, or equivalent amount of egg substitute with a tablespoon of skim milk and a quarter teaspoon of vanilla extract.
Season with a little salt and some sugar or other sweetener to taste
Soak slice of whole grain bread in the egg until it's all absorbed.
Heat a non stick pan over medium heat
Transfer the bread carefully to the pan and cook slowly.  When one side is golden, turn and cook the other side.  Slow cooking is important to cook the center.  It will puff up slightly.
Serve with a tablespoon of warmed fruit spread and fresh berries

One of my quick n easy favorites is an over medium egg with a scoop of cottage cheese and whole wheat toast. It goes really good together and has lots of protein.

Fast Fritatta - Single Serving

1 whole egg and 1 egg white, well beaten
1/2 cup combined chopped peppers and onions
1/4 cup shredded reduced fat cheese
1 teaspoon olive oil
salt & pepper to taste

In a non stick pan - saute the peppers and onions in olive oil until softened.  This can be done ahead in larger quantities, added to the pan and heated - saves time.
Pour the beaten egg over the vegetables
Top with cheese
Turn the heat down to low and cover the pan.
Let it cook for about 3 minutes or until the egg is set and the cheese melted.
Slide out onto a plate and enjoy

You can also make this with asparagus
