Tasty Summer Treats

So, if you live anywhere near me (in GA). It is HOT. Which always changes the types of foods I want. And in this lovely ice cream/cookout season, I'd like to hear some of your diet-friendly summer treats.

Mine:
Frozen grapes: I can't believe more people don't do this. Just spread 'em in a single layer on something, pop them in the freezer for a couple hours. Perfect when just coming inside from yardwork

Applesauce: Not my favorite food generally. Sure you can store it in the pantry, but putting in the fridge makes it much better. Light and refreshing, and 50 cal a cup.

Ice cream cups: What? I can't resist ice cream season. I buy them in the little cups that used to be served in the school cafeteria. At 90 cals a cup (for the fudge swirl), its the perfect way to end the day.

Other suggestions?

Regular low fat yogurts (Danone Silouhette are great) stored in freezer for 2+hours, makes a great evening snack for 50 cals!

I love having yogurt or a cottage cheese.  They're very refreshing.  And i LOVE frozen grapes.  They definately are the best!  I basically stick to fruit and veggies, cool and refreshing.  For dessert, i put one hershey's kiss in the fridge for a bit, and when it's nice and cool i suck on it for like 10 minutes.  It lasts forever and its so rewarding.  As carolally said, freezing yogurt  is a good trick too.  sugar free popsicles or fudgesicles are great as well. 

Last year someone turned me onto a really great summer beverage. Its ice water with slices of cucumbers in it. Great tasting and very refreshing on a hot day.

I also enjoy cold things...especially fruit.  Yesterday I actually made homemade popsicles.  I bought those popsicle trays and I blended strawberries with some nonfat greek yogurt and added just a small bit of sugar (one tablespoon for every 4 popsicles).  They are only 43 calories each...and I cannot wait to try one tonight! 

I also really enjoy fruit with yogurt...especially strawberries.  I also just recently bought two mangoes in order to make a mango lassi (mangoes with yogurt and ice all blended together...yum!)

Most fruit - fresh or frozen.

To curb your ice cream craving, try blending frozen fruit with low-fat yogurt and/or low-fat milk.  The frozen fruit thickens everything up so it's like ice cream.  I also like to add a little vanilla or cinnamon for flavoring.  My favorite combos are strawberry/banana and mixed berry.

I've even added dry oats and spinach to it before.  Yummy.

I know this may sound odd, but don't bash it until you try it.  Try cutting up watermelon into individual triangles with the rind, put it in a ziploc bag and pop it in the freezer. I eat them like popcicles... they're really tasty!

Other frozen fruit eaten that way and/or blended over ice are amazing as well. I add flax seed and veggies like carrots, iceberg lettuce, and celery (because these things have no distinct taste) to my smoothies as well for an extra serving of veggies with my treat!

freeze yogart to make it last.. and frozen bananas.. then i make fruit smoothie.. any thing that is cold
