Dude, I just bit into a Fuji apple, and it tastes like honey.  Woo hoo!  (sorry.)

i'm trying to eat clean.  meaning nothing refined/processed.  and no white flour/sugar. 

fack, i really don't know what i want to eat for dinner!  and if i don't figure it out, i'll end up buying a box of mac and cheese. :(

(btw, it's freakishly HLMish that we both ate a fuji apple less than an hour apart.  not just an apple.  the same type of apple).

Okay, so it's like an omelette?  Hmm.  I'd go with bell peppers, and maybe a squash (zucchini?).  Onions?  Tomaters?

That sounds really good, especially with tomatoes added!  And maybe a tiny bit of pancetta or bacon, just because I always want to add it to everything.  ;)

Yeah, a pound of bacon is a lot for one person (unless that person is me) :D

they should sell bacon by the strip.  you can buy deli meat by the slice...why not bacon?

Hmm... I generally don't like it, but have you tried the pre-cooked bacon?  You can keep it in the fridge for longer than uncooked bacon, and it's more convenient to use.  I wouldn't eat it plain like I do regular bacon, but it's kinda nice to have around if you want to crumble it up into a recipe.
