4th of July Healthy Potluck Dishes
Hello! I'm going to a Pot Luck for the holiday and am looking for any kind of healthy pot luck recipes that I could bring along with me. Any ideas besides the usual fruit and veggies??
This is my own invention and everyone likes it.
I know the holiday is overwith but for any upcoming event here is a great recipe that people ask me to bring:
Black Bean Salsa
1 can black beans, drained and rinsed 14.5 oz
1 can diced tomatoes with chilies, drained 14.5 oz
1 can sweet corn, drained and rinsed 14.5 oz
1/2 cup diced red onion
Juice of 1 lime or 2 tbs white whine vinegar
1/2 a bunch of fresh cilantro, chopped (about 1 cup)
2 tbs diced jalapeno peppers (+/- to taste) can use pickled
Combine all ingredients and refrigerate until cold.
Great served with chips, mixed in salads and wonderful over eggs. Enjoy!!
