I wonder if you can make caramel apples, but a sugar free version. Sureley they would be low calorie and very healthy. That would be a good halloween treat wouldn't it? The recipie would include splenda or truvia, but How to do it?

Unfortunately caramel needs sugar as it's a chemical process - it's essentially scorching the sugar molecules and dehydrating them to create it. So if you tried it with splenda there would'nt be enough molecules to actually caramelise.

You could dunk them in sugar free syrup though? Although I'm not sure it would set. Or plain chocolate - you wouldn't need much then.

I actually saw these made on TV this week by a natural foods (mostly vegan?) chef.  Not sure how good they are, but the recipe calls for brown rice syrup.  The syrup seemed to stick to the apples, not sure if it hardened or not. 

They aren't "sugar" free, but they don't contain simple sugars (as brown rice syrup is a complex sugar, meaning it breaks down more slowly in the body than regular white sugar).

 

Candied Apples

6 Red delicious or Granny Smith apples, rinsed well, left whole
Suzanne’s Specialties Raspberry Rice Nectar or brown rice syrup
6 Popsicle sticks


Place apples on a tray top side down. Heat rice syrup in a deep sauce pan over medium-low heat for 15 minutes or until it adheres to the surface of a spoon.
Push a Popsicle stick into each apple. Holding the apple by the stick, roll it around in the pan of rice syrup to coat the whole apple. Quickly place on a sheet of waxed paper until it sets. Makes 6 apples

 

I don't know about the kind on a stick, but you could probably buy some of that smuckers sugar free caramel sundae syrup and drizzle over apple slices.

 

There's also that Walden Farms calorie free caramel dip, but some people hate everything by Walden Farms, though I don't mind the calorie free bacon ranch dressing too much.  Never tried the caramel dip.

That would be consuming a heck of a lot of artificial sweetener. I'm not a big fan of artificial anything, sweeteners included, and I'd suggest you'd be better off eating a real caramel apple and just saving them for an occasional treat.
