Good morning. I totally forgot about this yesterday! It was a busy day. I didn't get on the elliptical yesterday, but I did walk up and down a sledding hill quite a bit, so I'm going to count that. ( I walked down to help carry the sleds back up for the little ones)

Well, there we go.. the first weigh-in results. It's really kind of the start of the challenge but gives us a baseline with some updates for those that have already lost a bit, too :) We have two weeks to make a difference! We can do it!!
I've gotta run to switch out laundry, fold my big girls' clothes, make a grocery list, feed the baby, make lunch for my 4yo and I, and take my little girls out for a walk in the fine, 'warm' weather of the low 50s! :)

Do you take measurements? At first I didn't but am now a strong believer in them because a lot of time things are 'tightening up' and you are gaining muscle so the scale doesn't show. However you will have lost size. If you feel like you have lost weight then you probably have.
Hello! Well, I got way off track today. I stayed up too late last night reading, so I didn't get up for my morning workout (and on Fridays early early morning is usually the only time I have b/c my daughter is out of preschool). Then I ate way too much today-I ate pretty much nonstop all day. But tomorrow is a new day, right? Saturdays are more relaxed since there's no school, and my kids are old enough that I can get on the treadmill for while they watch Saturday morning cartoons.

My family and I went to the mountains of NC for a get-away and came home a day early. It is not as relaxing when you have a toddler and 2 dogs...and are in a cabin where there is no one around. I am glad to be back home to my comfort zone and treadmill. (and computer..lol)
I wanted to share a staple in my eating...They are Joseph's Pita's and they only have 60 calories for a large size pita pocket. They are very thin, but hold whatever you stuff in them well. I eat them with laughing cow cheese (another staple) and egg white and spinach...or chicken, spinach, chopped cuccumber and green pepper, and ranch dressing spray. I found the pita's at Walmart in the deli section.

I live in the country in Kentucky. My husband and I went to two beaches 1 in South Carolina and 1 in North Carolina for our honeymoon in 2006. It was awesome.
Hi everyone, I had a tough day today. When I miss a meal my cravings go all over the place. I volunteer at a Hospice Thrift Store, and then went to a basketball game and so I missed out on getting a healthy snack as we all know at high school games they sell nothing but junk. So I had some popcorn and it just set me off on a bad slide. Came home and had cereal for dinner and an orange. The things you can get away with when you are an empty nester. I'll make up for it tomorrow on the treadmill. Just to let you know I will be gone for over a week as my husband and I are heading to Arizona to meet my folks who are "snowbirds". We will be playing golf several times while we are there. Looking so forward to it as I live in Northern Idaho and we have had record snow fall. Over 100" just in December alone! It is bitter cold right now and I could use some dethawing. I look forward to getting to know you all in the group. thanks for starting it Stephanie76. Diane
Hi everyone! Yesterday I had a wonderful day although I didn't do the best on mu calorie deficit. I am in a calorie deficit challenge so I was pretty dissapointed this morning. When I say this morning it is because I had planned on getting up last night and walking after I put my toddler to sleep but I fell asleep with him....just so exhausted. I had my older son yesterday and we spent the entire day out and about the town. I will just have to make it up today. I live in Indiana. Pretty cold but yesterday wasn't as bad as it has been. Have a good Sunday, ladies.
Steph....we should have just come visited you then!! :) We live south of Raleigh, so it was a 5 hour drive,(to Bryson city) but since we got a-lot of snow (a RARE thing here) it took us a long time to leave home, and it was a 7 hour drive there....UGH! We decieded it would be better to go to the foothills of the mountains next time. If you know of any good camp grounds around there, I would love to hear about them :) We have a little camper that we are looking forward to camping in this spring.
I am gearing up to get on the treadmill today...I am just not feeling motivated yet........

team_malone: you probably have a lot more snow than we got ourselves. so weird! but we rarely get any anymore. it used to snow really big here about every 3 years and then at least a little something every winter. now it's been very sparse and my kids have only seen it 2-3 times, some only last winter!
as for campgrounds... i'd have to look into it. there are some here in my county and we have beautiful areas to camp in, or to base you camp out of and then go hiking, etc. there are plenty of orchards to go picking, hiking trails, lakes to swim/boat/fish, .. look up chimneyrockpark.com that's in my county, actually, and many ppl love to go there and the surrounding areas. they'll have info on lodging and i know there are campers and such up there. we go there a few summer days a year just to walk the small village stores, picnic at Lake Lure, and such. we haven't taken the kids hiking up Chimney Rock as there are some more dangerous areas and we've always had little ones. but maybe this year...
Myrtle Beach and I forget the other one (and so does hubby). We actually went to the Smoky Mountains and Elopped and then decided on a whim to go to see the ocean because we neither one had so it was a lot of sleeping in the car and driving with a few quick stops along the way. We left on Friday and got back early Monday morning for hubby to go to work. Now that had to be a tough day to work since all we did was take a 2-3 hour nap in the car on the way back from Myrtle beach. But hey it was fun. Now I am over 50 pounds heavier and couldn't do that again if I wanted to. We got to see the sun rise on the beach it was so romantic. Then we wnet to some park that had some kind of old haunted castle you could tour.

I have a question for all you mom's....
Is it just me, or does it seem like time can go by so slow when you are trying to lose weight? I have been thinking about getting serious about counting calories and losing weight a long time....though that didn't get any results (LOL)...so this time around I feel like I am doing really good with sticking to my calorie intake and excersizing. I have been "hard at it" for 3 weeks now, and I feel better....look a little better....but still feel frusterated.....Like I should be skinny already! It feels like I have been doing this FOREVER and knowing that this will take at least 3 more months to get to where I want to be seems like an eternity. I am not going to give up...I just wish the next few months would be over with so I could really see that this is going to work and I will be able to do it.
Anyone feel like me??
I know what you mean team_malone. I am trying to lose 80 pounds and I know it is going to take forever but I just wish it could be done quickly so I can get on to other things. It seems as though I am constantly thinking about losing weight but am getting nowhere. I have been hovering between 201.4-209 all month and yes my weight can fluctuate as much as 4 pounds in 2 days. I just want to be back down under 200 pounds that is all I am asking for.
godsmissiongal.... I guess we just keep at it and hopefully the time will fly by. I remember being over the 200 mark and just wanting to get under it also....It took a month of working at it with no results....then BAM...I was down 7 pounds "all of the sudden"...So, don't give up! You can do it and soon will kiss the 200's buh-buh!! (Then the 190's...then the 180's...ect.) I am getting to the point where I realise I will have to do this all my life to be able to stay healthy. I do not do well on my own, obviously :)~
What are some of you planning for meals this week??
I am planning on a chicken stir fry with brown rice tonight. I use the boil in a bag brown rice, and you get half the bag for about 150 calories. I use chicken and lots of veggies, with a table spoon of stir fry sauce on mine (about 40 cals for the sauce) It makes a BIG serving for little calories.
Here are my meals for this week. Smoken Salmon and Shrimp fried rice with brown rice, Shrimp and Veggie Pizza, Shrimp rolls, steak and mushroom kabobs, Grilled Steak and Mixed grilled Veggies, Broccoli and Wild rice Soup, Meatball and three cheese Tortellini Soup, Reduced fat Ranch Ham Penne with whole wheat pasta. All these recipes (except for the Fried Rice) were found in Light and Tasty Magazine.

Here's the recipe:
Mini Shrimp Rolls
1 lb medium Cooked Shrimp, peeled and deveined
6 oz reduced fat cream cheese
1 cup (4 oz) Part-Skim reduced Fat Mozzarella Cheese, shredded
1 1/2 cups finely chopped cabbage
3 green onions, finely chopped
1/2 cup shredded carrot
1 Tbsp reduced-sodium soy sauce
2 garlic cloves, minced
48 wonton wrappers (these can be found in the health food section in your local Kroger, it took 3 people to find theses things for me. They are refrigerated so you will not find them with the other oriental food.)
2 Tbsp all-purpose flour
3 Tbsp water
Chop shrimp; set aside. In a mixing bowl, beat cream cheese until smooth. Add mozzarella cheese; mix well. Stir in cabbage, onions, carrot, soy sauce, garlic, and shrimp. For each shrimp roll, place 1 Tbsp of shrimp mixture across the bottom third of the Wonton wrapper to within 1/4-in. of bottom and side edges. Combine flour and water until smooth; bruse a 1/4-in. wide strip on side edges and top edge with water mixture. Fold bottom third of wonton wrapper over filling, then bring top over and pinch edges to seal completely. Lightly spray rolls with non stick cooking spray and place on a baking sheet that is sprayed with non-stick cooking spray. Place on jbaking sheet and back at 400 degrees for 15-18 minutes, turning once. Serve Warm.
3 shrimp rolls equal 153 Calories, 4 g Fat (2 g Saturated Fat), 70 mg Cholesterol, 317 mg Sodium, 16 g Carbohydrate, 1 g Fiber, 11 g Protein.
Makes 4 dozen.
I have really just started cooking in the last month or so. I used to say I was a horrible cook and I hated even thinking of cooking. Then I got some light and tasty magazines and started making things and my husband now thinks he married a chef or something. I still dont think I cook that great but I try and I do ok most of the time. Although I still burn garlic bread half the time. :) I think anyone can cook you just have to put the time and effort into it. It took me probably 3-4 hours just to pick out recipes that I thought we all would like. Fortunately my husband will practically eat anything I put in front of him. I am probably the pickiest in my family. Lets just say this weeks grocery bill was about $190.00 and NOOOOOO junk food. :) A cart full of fresh fuits and vegetables.
