three bean chili
if you go to the food network websight and look at rachel ray "veg head three bean chili". i love meat but this is made with no meat. it taste just like chili. if you make it just like it states it will make 17 ladles of chili costing 110 calories per ladle. two or three ladles are good for lunch. if you add the cheese on top you have to add those calories to your total.
i have been on this websight for two months and this is my first time writing. i am trying to change my pattern of eating to last a lifetime, not a quick fix. i get in a rut sometimes by eating the same thing over and over. i am looking to build a receipe book of "good" ideas with flavor and smart eating.
i have read many post and enjoyed your cander. i know this will be a lifelong battle for me because i use food as a reward,and i look to food when i need comfort. i like to eat when i am happy and also when i am down. good luck to all. jim

jzeller, have you looked at a site called www.whfoods.com? it stands for "world's healthiest foods." it's got a black bean chili that i've made and it's very good.
thanks for your suggestion--i'll go look up rachel ray's version, too. my husband likes chili, so even tho he's not really "into" dieting, he needs to be and this is a sneaky way to get him there!

I will have to go look . I am making a pot now, combining a regular beef and been chili and a vegetarian recipie , I wanted to add the veg to cut the calories . I have been craving chili for days as we are having a cold snap .
Lately that is how I cook I add veg to every thing so I can feel full on less calories
So we will see how it comes out . I am writing down every thing I put in so I can add up the callories

It came out great , I added 8 cups egplant and an extra cup onions to a bag kidney beans and 28 oz shoulder steak .2 lg cans tomato 1 sauce 1 diced ,and 2 cans campbells beef broth with the seasonings
cant even taste the veg they dissapeared in the sauce . but add vitamins and fiber while cuting the calorie density
I made a huge stock pot full . so I will bring some up to my dad
wonder if I can freeze chili !

Turkey Chili
6 Servings
305 Calories
Ingredients
2T vegetable oil (I used garlic spray instead)
3 OZ diced onions
3 OZ diced celery
3 OZ diced peppers
1 T roasted garlic (I used diced from a jar)
1 (20 oz) ground turkey (I used ground turkey breast)
1 (1.25oz packet of chili seasoning mix
1 (16 oz) can chili beans (undrained)
1 (10 oz) can milder diced tomatoes & green chiles (undrained)
1 (8 oz) can tomato sauce
Preheat large saucepan on medium high 2-3 min. Spray pan, add diced veggies & garlic cook until well browned ( 5 min).Rduce heat to medium and brown ground turkey about 6 min, until crumbles.
Stir in remaining ingredients. Bring to boil, reduce heat to low & simmer for 10 minutes or so. Stirring occasionally, until good and hot.
We loved this. You can use hot or mild chili seasoning, your choice.
Got this recipe from Publix's(www.publix.com/aprons). They have some great low calorie recipes that are quick and easy to prepare.

I FREEZE THE EXTRA ALL THE TIME . IT WORKS FINE.
This is yummy! Instead of refried beans,I use tofu crumbles from Morningfarms...its substituting for ground beef and passes off to the family as a real meat and beans chili dish! SSSSHH-they'll never know and you save the calories.
Hi and thanks for reviving this thread! I make vegetarian chili all the time, with all kinds of beans. My favorite has lots of bell peppers and a combination of hot peppers too, and, of course, plenty of onions. I garnish it with a spoonful of Greek style yogurt, which has a texture and taste like sour cream. I like to eat it with a real, yellow corn tortilla, just steamed soft.
