Three-Squared Chili Soup Recipe

Makes 16 servings


For something spicy, hearty and healthy just this side of the border, try my Three-Squared Chili Soup recipe with three kinds of beans and three kinds of peppers. Full of protein and fiber but with less than 5 grams of fat per 1-cup serving.

Ingredients
2 tbsp olive oil
1 cup onions, sliced
4 cloves garlic, minced
1 pound beef stew meat, cubed
6 ounces beer
56 ounce whole tomatoes, squished
11 ounce diced tomatoes
11 ounce kidney beans, drained and rinsed
11 ounce black beans, drained and rinsed
11 ounce white kidney beans, drained and rinsed
2 tsp Tabasco sauce
2 tbsp chili powder
2 tbsp ground dried pepper, (such as Chipotle)
2 tsp cumin
1 tbsp salt
Directions
  1. Saute beef in olive oil until brown; remove from pan and set aside.

  2. Saute onions and garlic until slightly translucent; deglaze pot with beer.

  3. Return meat to pan, add tomatoes, beans and seasonings.

  4. Simmer on medium heat for 45 minutes.

  5. Makes approx 16 1-cup servings.
