I brush the boneless, skinless chicken breasts with fat free/light Italian Dressing and broil them or bake them. Then it is shredded and served over white rice (I spray ICBINB on the rice first). Serve with a salad or vegie of your choice. My family likes it and it is pretty filling.

Mcgormick has alot of different kind of seasonings. I like their lemon and herb one. just sprinkle on the chicken and grill or bake. serve w. rice/whole grain pasta/veggies. you can even you the seasonings on the veggies. I also have a carribean jerk seasoning and it is super spicy, if you like things like that. I like to make my own italian galic herb chicken. I sprinkle on the chicken : italian seasoning, salt, pepper, garlic, little bit of onion powder, then I will bake it. comes out really yummy. Also when cooking the chicken, if they are thin cutlet pieces, I would only bake them at 375-400 for 10 min about. Its usually super juicy and tender. Or if its the whole breast (boneless skinless) like the ones in the value pack from the food store, that would be same temp at 20-25 min. towards the end I always cut the thickest piece in the middle just to double check, but 99% of the time im on the money.
Irishindian's recipe sounds like one I should try! If you Google "low fat chicken recipes" you'll find a ton of them. I like to take the chicken breasts and grind my own meat to use in meatballs, or replace in recipes that call for ground beef. When the chicken breasts are on sale, usually the tenders are as well. Grinding your own is a whole lot less expensive than buying pre-ground chicken from the store. So, take your favorite beef recipes and use ground chicken in place of the ground beef and be creative!
You could make healthy chicken burgers by blending up your chicken breasts with spring onions, garlic, parsley and gravy granules.

Chicken skewers - I chop up chicken breast, mushroom, pineapple, pepper, tomato into equal sized cubes. Bush over with some olive oil and bake in the oven until cooked.
Chicken and sweet potato burgers - place the chicken (cut into peices) onion, herbs into a food processor and add to grated sweet potato. Shape into burgers and bake until cooked.
You can marinade chicken in all sorts of sauces, cook and then eat hot or cold with noodles, pasta, salads, in sandwiches, the possibilities are endless.
chicken stew - brilliant for the winter months
chicken breasts, sweet (bell) peppers of any colour, onion, celery if you like it, potato, vegetable stock and tinned tomatos
cook the chicken first (baked preferably), but not all the way through
dry fry (fry without oil - basically grilling) the vegetables and biol the potato chunks for a bit
chop up the chicken and add to the veg and potatos (drained)) in a casserole dish, put the tinned tomatos and vegetable stock over the top and cook untill piping hot and the chicken is cooked all the way through.
you dont need to add anything else to it, just eat it as it is!
