Ohh. Pumpkin Spice Lattes are back at Starbucks, but more than anything, I just want to go and make some pumpkin bread. And some pumpkin pie...cookies...cake...even soup. I LOVE PUMPKIN!

mmm yes! Love pumpkin.  Can't wait til it gets a bit cooler so I don't sweat too much when I'm eating pumpkin oatmeal.

Oh yeah, I just tried the Pumpkin Spice frappaccino yesterday at Starbucks. That is what got me to thinking about it again. I thought I might try one of Marie Callender's pumpkin pies this year. Last year I remember McDonalds came out with the pumpkin milkshakes... those were good.

Pumpkin pie and pumpkin muffins are my faves!

OH MY GOODNESS: HAVE YOU EVER SEEN ANY OF MY POSTS! I AM COMPLETELY OBSESSED WITH PUMPKIN! I EAT IT EVERY MORNING FOR BREAKFAST - THANK YOU LIBBY'S! It's so good sprinkled with cinnamon & stevia!!! Mmm, I don't need the pie, just the pumpkin!

I used to work at a smoothie place and we had a seasonal pumpkin milkshake that had frozen vanilla yogurt, cinnamon, nutmeg, milk, raw sugar, and of course canned pumpkin! Around this time of year I still like to make my own version of it. Delicious! I love Libby's too.

This may sound gross, but I like to put 2 tsp of the Coffemate pumpkin spice powdered creamer in my oatmeal! It's so "fall" tasting! I love fall!

We love to eat pumpkin in savory dishes too, like stir-fry, and in soups. Try the kabocha pumpkin!

I LOVE pumpkin.  I make a killer pumpkin bread, and now that I eat oatmeal, I am looking forward to trying it with that.  My husband makes a DELICIOUS pumpkin and rice soup as well (must have REAL pumpkin for this...not the canned stuff).  Yum yum yum!

kbella, would you mind sharing the recipes for both the pumpkin bread and the pumpkin and rice soup?  That is, if they're not secret ;) 

Yeah. I love pumpkin pancakes and pumpkin muffins.

Here is the recipe for the pumpkin bread I use.  It is honestly the BEST pumpkin bread I have ever tried (hence all of the great reviews on it)!  Send me a PM if the link doesn't work:

As for the soup, my husband is a great cook and makes it from scratch.  So, for 4 people, the ingredients would be: 

1 onion (medium/large), 400 grams of pumpkin (the raw kind, not in the can, also cut in cubes), 200 grams of rice (like a risotto rice or another italian rice), 3 tablespoons of extra virgin olive oil, salt (to taste), 1/2 teaspoon pepper, 1/2 teaspoon nutmeg, 5 cups of vegetable broth.

1.  Cook the onion slowly with the olive oil.  While cooking add a small spoon of water. 

2.  Add the chopped pumpkin.

3. Cook until the pumpkin is soft (about 15 minutes).

4.  When the pumpkin is soft, add the salt, pepper and nutmeg. 

5.  The, add the rice (uncooked), followed by the vegetable broth.

6.  Bring to a boil and cook for about 20 minutes, stirring frequently. 

7. Enjoy!

*sigh* I cannot WAIT to get my first pumpkin spice latte of the year this weekend :) The pumpkin spice latte and the gingerbread latte are my favorite treats in the winter months!!

Plus I love canned puree'd pumpkin in my oatmeal and mixed with cool whip and then frozen yummm

where do you get pumpkin oatmeal? Sounds delicious!
