I work full-time. I have a 4-year-old who's borderline autistic. And a husband who generally works nights and weekends.

I'm not a very good cook. I don't have time to cook (too busy doing everything else). I'm a picky eater. I despite meals involving too many ingredients. I like things simple. I don't eat any meats besides poultry and the very occasional bacon slice or hamburger when I'm extremely hungry and nothing else's around. I love my George Foreman and my crockpot. Unfortunately, that limits what I can do.

Is there anyone who can give me recipes for things like fettuccini alfredo without all the fat and calories? I just want some healthy recipes that are steak wellington or roasted chicken with portabello mushroom caps. I just don't have time for that.

HELP!?! Please?

I picked up Easy Healthy Cooking with 4 Ingredients and absolutely love it. She has recipes in there for simple low fat/cal alfredo sauce. When I get home, I'll look it up, input it, and post it here for you. If I think of anything else, I'll let you know!
Here's one Claire's Fast Macaroni & Cheese

Add some frozen, thawed, microwaved broccoli and some diced leftover chicken to this, and it's a one dish meal
And the ever popular Chicken Mexicana
Thanks for all of the suggestions! I'm planning on trying the Fast Macaroni & Cheese with broccoli and chicken for dinner Saturday night! We LOVE pasta, broccoli, cheese, and chicken so this sounds like a good place to start. Then on to the Chicken Mexicana and Spanish & Rice Casserole. If those work out I'm going to try the Easy Healthy Cooking with 4 Ingredients. It shouds exactly like me!
